自2016年，以連鎖店形式席捲全球的咖啡巨頭星巴克宣佈新增冷泡咖啡，推出氮氣咖啡至今，氮氣咖啡首先出現在西雅圖的超級旗艦店“咖啡烘焙坊”，隨後迅速擴張至舊金山、紐約、洛杉磯等美國七大城市，成爲門店內銷量最好的一款飲品。</p>

雖然氮氣咖啡風潮被星巴克推向高潮，可氮氣咖啡的概念卻並非來於星巴克，美國俄勒岡州波特蘭市Stumptown Coffee Roasters的美食科學家內特·阿姆布魯斯特（NateArmbrust）曾預言了此類產品必將誕生.他認爲,既能保留咖啡全部口味、又能吸取啤酒完美口感的咖啡飲品必將成爲市場主流。隨後，爲氮氣咖啡的實現做了無數實驗，終於在Guinness的啓發下（健力士—來自愛爾蘭Arthur Guinness Son & Co.其使用氮氣製作啤酒，形成的小氣泡會在頂部形成綿密的泡沫層，並且讓啤酒的香氣和口感能夠完美體現），通過時間與壓力的調整，在2013年證實了其想法的可行性，並引起了不小的轟動。</p>

Part One：氮氣分離系統—無需外接氮氣瓶</p>

作爲空氣中含量約78%的高含量組成部分，雖然氮氣無色無味且不活潑，並且抑菌防氧化，是安全氣體，但是外接罐裝氮氣依然存在安全隱患，比如氮氣瓶受熱、撞擊、墜落髮生爆炸，亦或是由於氮氣瓶的結構工藝材質不符合安全要求，未按照週期檢測，未按照規定安裝……產生的安全問題等等。</p>

Part Two：氮氣注溶系統—快速·充分·完美融合</p>

雖然氮氣對咖啡口感的提升顯著，但氮氣是惰性氣體，難溶於水，僅微溶於乙醇（也就是酒精），所以如何讓氮氣與不含乙醇的咖啡(或其他飲品)充分融合，也是對一臺優秀的氮氣飲料機的考驗之一。</p>
