生性溫馴的麝香貓不是什麼咖啡豆都喫，它們專挑咖啡豆中最成熟香甜、飽滿多汁的咖啡果實當作食物。</p>
<p>
據“中央社”報道，“世上最昂貴咖啡”之稱的麝香貓咖啡主要產地之一在印度尼西亞，而在歐美等地，麝香貓咖啡豆甚至可以賣到每公斤800美元，這種咖啡豆可產製每杯價格高達80美元的頂級咖啡。在印度尼西亞從事麝香貓咖啡豆烘焙的林怡君表示，“麝香貓可不是什麼咖啡豆都喫，它只挑好的豆喫”。麝香貓等於先幫人們挑過咖啡豆，烘焙出來的咖啡入口回甘，脣齒留香。</p>
<p>
“貓屎”咖啡受歡迎</p>
<p>
據報道，“Luwak”是印度尼西亞人俗稱的“麝香貓咖啡”。麝香貓屬於雜食性動物，棲身在海拔2000米以下的熱帶雨林、亞熱帶常綠闊葉林區或丘陵、山地。有調查指出，咖啡市場上每年約有50噸的麝香貓咖啡，都是來自印度尼西亞、越南、菲律賓和中國等。</p>
<p>
麝香貓咖啡到底是如何製作的呢?咖啡果實經過麝香貓的消化系統，被消化掉的只有果實外表的果肉，咖啡原豆原封不動被排出體外。據悉，這種消化過程會破壞咖啡豆中的蛋白質，降低咖啡的苦澀味，讓咖啡的口感會更趨豐富圓潤，香醇回甘。</p>
<p>
一般咖啡是採用水洗或日曬等方式，除去咖啡果皮、果肉和羊皮層，最後取出咖啡豆而製成。但麝香貓咖啡是利用動物體內自然發酵的過程，取得咖啡豆。加上麝香貓只存在於印度尼西亞小島等島嶼，出沒的時間和地點神祕莫測，且數量日益減少，纔會造成麝香貓咖啡價格居高不下。</p>
<p>
餵養喫豆有學問</p>
<p>
不過，報道指出，餵養麝香貓喫咖啡豆也是有學問的。在印度尼西亞從事麝香貓咖啡豆烘焙多年的林怡君表示，在餵養麝香貓時，咖啡豆不能天天喂，否則麝香貓會拉肚子;咖啡豆只是麝香貓正餐的一部分，也必須餵食它香蕉、菠蘿各種水果以及雞肉等食物，讓麝香貓的腸道酵素更豐富。</p>
<p>
她說，事實上，生性溫馴的麝香貓不是什麼咖啡豆都喫，它們專挑咖啡豆中最成熟香甜、飽滿多汁的咖啡果實當作食物，“麝香貓比機器還厲害”，等於已經幫人們選過一次咖啡豆了。</p>
<p>
談到品味麝香貓咖啡，外行人可千萬不要以爲“有錢就是大爺”。林怡君說，“喜歡喝咖啡加糖、加牛奶的人就別喝麝香貓咖啡了”，麝香貓咖啡的精華在於“入口回甘”，順口、回甘，即使入喉一段時間，嘴裏也還會有焦糖、巧克力香氣，這和一般要加糖、加牛奶的咖啡大不相同。</p>
<p>
她說，有的客人在喝完麝香貓咖啡後再去品酒，因爲嘴裏仍回甘，酒的年份彷佛瞬間從12年增爲18年。</p>
<p>
行情太好 引發虐待動物爭議</p>
<p>
雖然麝香貓咖啡讓老饕脣齒留香，不過，英國廣播公司(BBC)日前調查指出，若干出現在市場上的麝香貓咖啡標榜是來自“野生麝香貓”，但事實上卻是印度尼西亞業者把麝香貓關在格子籠中飼養，有虐待動物之嫌。</p>
<p>
印度尼西亞麝香貓咖啡協會創辦人藤古(Teguh Pribadi)堅持，這種錯標印度尼西亞麝香貓咖啡來自野生麝香貓的情形並非普遍現象，或許只是個案。</p>
<p>
曾經圈養麝香貓的林怡君則認爲，農民和麝香貓互利共生，麝香貓是他們的經濟來源，如果虐待生財工具，麝香貓體質差，產出的咖啡豆質量一定不好，農民收入會受到影響。</p>
<p>
她說，圈養方式方便農民定時採收咖啡豆，圈養場地多是能讓麝香貓自由活動的自然空間;而野生麝香貓排泄出來的咖啡豆往往需耗時才能找到，農民找到時咖啡豆已經發酵過頭，質量也不好了。</p>
<p>
此外，由於麝香貓咖啡物稀價貴，“假貨充斥”的消息時有所聞。印度尼西亞媒體日前報道，印度尼西亞有一種類似麝香貓的貓科動物，印度尼西亞話叫做“Musang”，由於售價比麝香貓便宜，食量比麝香貓大，常常被咖啡業者購買來餵養，再以排出的咖啡豆混充麝香貓咖啡販賣。</p>
<p>
林怡君呼籲，消費者在選購麝香貓咖啡時一定要看清楚產地、成分等事項，在實際品嚐時若是隻有一般咖啡的苦澀味道，而沒有麝香貓咖啡應有的香醇、回甘口感，那就是買到魚目混珠的“假麝香貓咖啡”了。</p>
