'<p><span style="font-size: 16px;"><img alt="" src="/uploads/allimg/181028/17-1Q02Q5225B43.jpg"/></span><br/><span style="color: rgb(62, 62, 62); font-family: 微軟雅黑, 黑體, Arial; font-size: 14px;">專業咖啡師交流 請關注咖啡工房(微信公衆號cafe_style )</span><br/><br/><span style="font-size: 16px;"> 浸泡式萃取法,顧名思義,其原理是讓咖啡粉浸泡在容器中,與熱水作用一段時間,溶解擴散以順利釋出咖啡的風味與芳香物質,並在雜味析出前,完成萃取。相對於手衝,浸泡式萃取的變因相對較小。常見的浸泡式萃取器具包括法式濾壓壺、虹吸壺,以及愛樂壓等。其中最爲普遍的器具,就是法式濾壓壺,因爲操作非常簡單,也不需要加入濾紙,可以快速萃取飽滿濃郁的咖啡,因此廣受歡迎。</span></p><p>
</p><p><span style="font-size: 16px;"> 不過採用浸泡萃取時,並不代表可以省略過濾步驟,譬如愛樂壓就需要濾紙或金屬濾網來過濾咖啡液;虹吸式咖啡壺則搭配由彈簧鉤、網片和濾布組成的過濾器,另也可使用濾紙或金屬濾網。搭配不同濾器,也會對風味產生影響,像是愛樂壓搭配濾紙製作的咖啡,其風味就不同於使用金屬濾網的愛樂壓。因爲濾紙會吸附油脂,所以使用金屬濾網的愛樂壓口感會更爲厚實;而選用金屬濾網的虹吸壺咖啡,偶有金屬味產生,衝煮出的咖啡味道較銳利,陶瓷濾器的口感相對較溫潤,也不易有味道殘留。</span></p><p><br/>
</p><p><span style="font-size: 16px;"> 雖然減少了手衝過程中的注水變因,但隨著器具的搭配與使用,卻也大大地影響了咖啡呈現的樣貌。每款衝煮器具都有其相對應的衝煮流程,其中也包含了像是豆子研磨度、水粉比(咖啡與注水量的比例)、水溫高低與時間長短等種種不同的變因。想要找到自己喜愛的風味,可以先試著設定好不同變因的參數,逐次試驗,才能找到最適合自己的模組,穩定地萃取出想要的風味。</span></p><p>
</p><p><span style="font-size: 16px;"> 這回,《咖啡迷的風格咖啡器物學》要介紹的是虹吸壺:</span></p><p>
</p><p><span style="font-size: 16px;"> 虹吸式咖啡的口感除了豆子本身會有不同,因受到火源加熱,也會隨著衝煮產生高、中、低溫的差異,因而創造出豐富的風味變化。飲用時最先感受到的是甘甜感,溫度稍降後纔會跑出酸味;高溫時,咖啡香氣非常濃烈,待溫度下降至7 0度時,咖啡豆固有的豐富滋味,也會逐漸完整浮現。</span></p><p>
</p><p><span style="font-size: 16px;"> 虹吸式咖啡壺的衝煮四步驟:</span></p><p><br/><br/>
</p><p><span style="font-size: 16px;"> STEP 1 放入濾器</span></p><p>
</p><p><span style="font-size: 16px;"> 首先將濾器放入上壺,將濾器彈簧從下方管口拉出,鉤子扣在管底,接著拿攪拌棒調整濾器位置,使其置中。</span></p><p><br/><span style="font-size: 16px;"><img alt="" src="/uploads/allimg/181028/17-1Q02Q64631b6.jpg"/></span></p><p><span style="font-size: 16px;"> <br/>
STEP 2 加熱</span></p><p>
</p><p><span style="font-size: 16px;"> 接合上壺與下壺後,點火升溫下壺的水。持續升溫,透過下壺內空氣的熱脹冷縮, 將水推擠至上壺。此時可觀察水面浮起的泡泡, 若有大泡泡產生,則表示濾器不平整,接著可使用攪拌棒調整位置,確定密合不留空隙。</span><br/>

STEP 3 倒入粉末,攪拌</span></p><p>
</p><p><span style="font-size: 16px;"> 當絕大部分的熱水都注入上壺後,調整至需要的火力,接著倒入咖啡粉,計時並開始攪拌,攪拌是虹吸式煮法過程中關鍵的一環,目的是使咖啡均質萃取,先使用攪拌棒分區塊輕柔按壓,讓粉往下沉,最後再畫圈攪拌使粉末化開,粉末才能接觸到足夠水份,順利釋放物質。約第20-30秒左右時進行第二次攪拌,烹煮過程中會不斷地有香氣冒出,總衝煮時間約50秒-1分鐘。</span></p><p><br/><span style="font-size: 16px;"><img alt="" src="/uploads/allimg/181028/17-1Q02Q64H1447.jpg"/></span><br/>
</p><p><span style="font-size: 16px;"> STEP 4 停止加溫</span></p><p>
</p><p><span style="font-size: 16px;"> 關火後,因爲氣體壓力變小,熱脹冷縮,上壺咖啡液體因虹吸原理而落下(另一做法是用溼布包覆下壺, 加速熱冷縮的反應。)用畢後可將咖啡壺下壺浸泡熱水靜置,以帶走殘留的油漬,若需徹底清潔,則可以使用清潔酵素或小蘇打粉。</span></p><p>

</p><p><span style="font-size: 16px;"> 火候掌握是虹吸式煮法最關鍵的變因,使用上,酒精燈需調整燈蕊、不易控制火力;瓦斯爐火力強但易有受熱不均的現象,建議可以將火源放在側邊,隨時移動調整火力;鹵素燈因沒有火焰,加熱狀態最爲穩定。</span></p><p>

</p><p><span style="font-size: 16px;"> 此款虹吸壺是Harioy早期推出的入門基本款,目前已經停產,需要耐心尋找。此款虹吸壺的特點在於其玻璃的形狀採用了仿骨董賽風壺的設計,目前有同樣玻璃形狀的款式則是MCA-3。不過早期版的虹吸壺,造型更爲復古質樸,有別於常見的長筒設計。</span></p><p>

</p><p><span style="font-size: 16px;"> 使用玻璃棒濾器不需要濾紙或濾布,紙與佈會吸收咖啡油脂,油脂本身帶有較多的香氣,因此使用玻璃棒濾器可以保留較完整的咖啡風味。</span><br/>
