近來咖啡也成爲食安新聞的要角，赭麴毒素所造成的食安問題因此受到消費者的關心，而主管機關也加強稽查行動，併發送了宣導資料。身爲食品產業的一員，生態綠樂見主管機關的努力與消費者的關心，但對於衛福部宣導「咖啡粉末要放冰箱」的建議，我們認爲在考慮消費者日常飲用咖啡的使用方式後，反而會弄巧成拙，增加更多的風險，並減損咖啡的風味，因此有必要提出更適切的咖啡豆（粉）保存方式。</div>

1. 生豆來源</div>

來源應當透明可追溯，最好有第三方組織認證生產流程的，確保生豆沒有農藥殘留、出口時有符合咖啡生豆的國際規範。</div>

生態綠公平貿易咖啡豆，每一咖啡袋上都有國際公平貿易標籤認證，以及生產者的編號，來源清楚透明可追溯。</div>

2. 加工過程</div>

咖啡豆最容易發生大量黴菌污染的地方，是烘焙的環境。烘豆機所在的環境是否有接受良好的衛生管理，還是開放式易受黴菌污染？</div>

而新鮮烘焙後的咖啡豆，由於會自然呼吸排氣，是無法立即進行真空包裝的，因此比較好的包裝方式，是使用單向排氣閥，維持新鮮咖啡豆排出二氧化碳，並且避免外部空氣灌入咖啡包裝中。</div>

3. 陰涼保存</div>

使用避光式密封罐存放開封後的咖啡豆，存放於家中陰涼處，同時降低空氣污染、也避免陽光分解掉好喝的咖啡風味，加速油脂氧化。</div>

4. 現磨現煮</div>

咖啡豆磨粉後，接觸空氣的表面積放大數倍（隨研磨大小不同），所以咖啡粉吸收空氣中水分，發生問題的機率也隨之放大，因此現磨現喝，不但能有更加的咖啡體驗，也可降低污染的風險。若是選擇濾泡式掛耳包，也應選擇有充氮包裝的商品，來降低外部空氣滲入包裝的風險。</div>

市面上常見一磅或是半磅的咖啡豆，都很適合一般消費者依據每天的使用量採購一個月內喝完的使用量，就不會發生喝不完擔心變質的問題羅。</div>
