日前，一篇名爲《速溶咖啡喝不得，致癌物比抽菸多》的文章在互聯網上傳播。文章稱速溶咖啡致癌性高，其含有的致癌物—丙烯酰胺的濃度甚至高於蛋糕、炸薯條、薯片與香菸。食品與營養信息中心專家阮光鋒表示，這種說法是典型的邏輯陷阱，世界上沒有任何食物可謂絕對的安全，況且丙烯酰胺是否導致人類癌症還無定論，世界各國和國際組織均在關注和研究中。</p>
<p>
光喝咖啡達不到致癌量</p>
<p>
據瞭解，丙烯酰胺是一種白色晶體化學物質，國際癌症研究機構(IARC)1994年對其致癌性進行了評價，將丙烯酰胺列爲2類致癌物(2A)，即人類可能致癌物。阮光鋒介紹，丙烯酰胺是否導致人類癌症還無定論，至今尚缺乏流行病學證據。“某些特殊職業人羣可能因爲大劑量的攝入而造成神經損傷或其他健康損害，但靠喫或喝是達不到致癌的量。”</p>
<p>
那麼，速溶咖啡中哪來的丙烯酰胺?據相關資料顯示，生料綠咖啡是不含丙烯酰胺的，當綠咖啡經高溫烘焙爲咖啡豆，每公斤含丙烯酰胺約300微克;待從咖啡豆中提取出速溶咖啡來，每公斤含丙烯酰胺的量就高達700到1000微克。通常，速溶咖啡丙烯酰胺含量，是咖啡豆的2到3倍。</p>
<p>
爆炒油炸都會產生丙烯酰胺</p>
<p>
當焙烤、油炸等加熱過程超過120℃，食品中就會產生丙烯酰胺，且溫度越高、加熱時間越長，形成的丙烯酰胺越多。所以，包括薯片、炸薯條、大麥茶、燒炒的菜餚等，無論油炸還是非油炸，只要加熱程度足夠，都會產生丙烯酰胺。</p>
<p>
根據香港食物安全中心的估計，當地人攝入的丙烯酰胺約45%來自炒菜。這主要緣於爆炒的烹飪方式，比如爆炒西葫蘆的丙烯酰胺含量可以達到每公斤360微克，比炸薯條還高。</p>
<p>
阮光鋒表示，有些食物中的丙烯酰胺含量高，但我們總體上喫進去的丙烯酰胺並不多。“世界衛生組織估計平均水平是每人每天20-30微克。不同國家消費者喫進去的丙烯酰胺雖然來源有所不同，但其實也差不太多，東方人的攝入量還會比西方人稍低，比如我國的平均攝入量大約是18微克(以60公斤體重計)，總體上是不足爲慮的。”</p>
<p>
喝速溶咖啡要有節制</p>
<p>
不少上班族在辦公室喜歡沖泡速溶咖啡來解渴提神。不過阮光鋒提醒，儘管速溶咖啡致癌風險小，從健康角度來說，還是應</p>
<p>
該減少含丙烯酰胺食品的攝入。</p>
<p>
日本的一項研究表明，根據人體質的不同，也許一天喝五杯以上速溶咖啡也不能達到提神的效果，這是因爲速溶咖啡沒有咖啡豆原有的濃度，反而額外加入增加風味的奶油、糖漿、咖啡伴侶等，一份速溶咖啡中，真正的咖啡成分大約只有原磨咖啡的1/4到1/3。</p>
<p>
目前，市面上有很多號稱“幾合一”的速溶咖啡，這其實是加了咖啡伴侶的速溶咖啡。而咖啡伴侶多含有氫化植物油，氫化植物油中的反式脂肪酸對於人體沒有任何積極作用，反而會增加心血管等疾病的風險。</p>
<p>
阮光鋒建議，目前有關咖啡健康價值的研究多是基於黑咖啡，建議消費者多選擇黑咖啡，飲用時可加入牛奶作爲“伴侶”。</p>
