所謂低因咖啡就是隻有微量咖啡因的咖啡。衝煮出的咖啡中咖啡因含量不得超過0.3%。也就是說一杯低因咖啡中的咖啡因不得超過5mg(一般一杯236mI 的咖啡含有50mg 到200mg 的咖啡因)。而根據美國食品及藥品管理署FDA的標準,脫因咖啡的咖啡因去除率不低於97%;而歐盟標準咖啡因去除率需達到99.9%。
咖啡因是種神奇的物質,生活中很多時候你都在不知不覺的攝入咖啡因,冬天的熱可可、運動後的功能飲料、甚至是解暑神器可口可樂,都含有一定量的咖啡因。咖啡因具有興奮中樞神經並暫時恢復一定體力的功效,聽起來很像加了個buff。其實,咖啡因即1,3,7-三甲基黃嘌呤,是一種黃嘌呤生物鹼化合物。
咖啡因在臨牀上多用來治療神經衰弱及昏迷復甦,大自然中,大多數植物都含有這種物質,是植物自我保護機制的一部分,昆蟲在攝入咖啡因之後會被麻痹。同樣,對於人類來說,每一天咖啡因的攝入量都有一個上限,尤其是對於孕婦、心腦血管疾病人羣、青少年、咖啡因敏感體質人羣以及…生理期的小姐姐們,都需要儘量減少咖啡因的攝入,但咖啡之所以被稱爲目前唯一被法律所允許的毒品很大程度上就是因爲咖啡因,雖說拋開劑量談毒性都是耍流氓,即便正常人羣,攝入咖啡因的量過多也會導致心悸、胃痙攣,甚至咖啡因中毒,在這種情況下,低因咖啡也應運而生。
低因咖啡豆簡直就是不能攝入咖啡因人羣的福音啊,果然喫貨的智慧是不容小覷的。然而低因咖啡也分天然的和人爲加工的。天然的非常罕見,尖身波旁就是其中一種。2004年,巴西科學家宣佈在非洲埃塞地區的咖法森林裏發現了另外3種非常珍貴的低因咖啡,這就意味着不久的將來我們可以喝到天然低咖啡因含量的咖啡了。
歷史上第一個將咖啡因從咖啡中提取出來的人是Friedlieb Ferdinand Runge,但他沒有對其進行進一步的研究或將其投入商業使用;
而第一個使脫因投入商業化的是德國人Ludwig Roselius,他和同事於1903年發明了脫因方法並在1906年申請了專利,但是由於其方法中使用到苯作爲溶劑,如今這種方法基本不再使用。
CO₂處理法
關於人爲加工,目前已有三種去除咖啡因的生豆處理方法,遺憾的是幾乎都不可能自己在家操作。第一種是走科技流的超臨界二氧化碳處理法,咖啡因的處理率可達96——98%,是效(cheng)率(ben)最高的一種處理方法。
不那麼極端的超高濃度的二氧化碳有着接近液體的密度,但是仍然是氣體狀態,故而具有氣體的粘度,可以理解爲夏日夜晚蚊帳裏本來只有一隻蚊子嗡嗡嗡,突然變成了300只蚊子嗡嗡嗡,蚊子的密度大大提高了,雖然可能它們的飛行速度會降低但是降低幅度絕不會很大,不信試試?
同理,高濃度二氧化碳就像餓極了的蚊子,你鮮美的肉體就是被捕捉的咖啡因,被子、牀墊、枕頭則是咖啡豆裏其他的化學成分和風味因子,此時處於純水溶液中的咖啡豆們體積已經膨脹,本來結合緊密的咖啡因等化學分子就處於了鬆動狀態,就好像你睡覺嫌熱踹了被子,二氧化碳分子們紛紛撲向咖啡因分子並與之結合溶入純水溶液中,處理過的生豆只要進行乾燥處理就可以留存住絕大部分的風味了,被二氧化碳帶出的咖啡因可以視爲百分百純的咖啡因,進行分離操作就可以進行回收,由於二氧化碳也是大氣成分的一部分,尾氣可以直接排放於空氣中,咖啡豆中的碳水化合物、蛋白質等各種風味因子均可留存,萃取效率極高。缺點當然有,那就是貴啊。
溶劑萃取法
第二種是溶劑萃取法。這種原理聽起來晦澀難懂,其實早已深入日常生活,比如刷碗時碗裏難洗的油脂,而洗潔精中含有的脂質成分可以將油脂溶解幷包容其中,再用清水沖洗,就很容易洗乾淨了。咖啡因是一種生物鹼,採用三氯甲烷,也就是我們常說的氯仿,通常被用來萃取青黴素、精油和生物鹼等,來提取咖啡豆中的咖啡因。
因爲嘌呤本身具有類似於苯環的結構,只不過被N原子取代而形成了雜環化合物,故而還可以選擇苯溶液來進行萃取。
溶劑萃取法有兩種,直接萃取法就是先用蒸汽讓咖啡豆氣孔張開,趁機用相應溶劑溶解其中的咖啡因,最後由蒸汽將溶劑與咖啡因一起帶出,簡單粗暴但是行之有效。另外一種叫間接萃取法,先用熱水浸泡生豆,儘可能將生豆中的各種化學物質溶入熱水中,再把溶劑倒進去,咖啡因會與溶劑結合,上浮到液體表層,然後將分出層的溶劑與下層去除了咖啡因的清液分離,再將處理過的咖啡生豆浸泡在濾出的清液中,從而確保咖啡風味因子儘可能地保留在咖啡生豆中。用溶劑處理咖啡生豆的方法成本是最低的,但是不論是氯仿還是苯系物溶液都有一定毒性,而且尾液處理困難,操作過程麻煩,加之脫因效率在三種方法中最低,所以目前基本已被淘汰。
瑞士水處理
現在咖啡行業使用最多的低因處理方法是瑞士水處理法,先在高壓環境中浸泡一批生豆,使生豆中的風味物質儘可能全部溶於水中,將這批生豆棄之不用,再用活性炭等將浸泡液中的咖啡因提取出來,用萃取過咖啡因的浸泡液來浸泡同一批次的生豆,這就好比把75%的濃鹽水倒進25%的鹽水中,最後達到溶液中平均50%的生命大和諧,由於只有咖啡因成分殘缺,生豆中的咖啡因會自發地溶入浸泡液中,並保留生豆中的其他風味因子,這種方法操作較爲簡單,尾液處理也不麻煩,過程中幾乎不產生污染,可大批次處理咖啡豆,成爲現在商業應用最多的處理方法。
但這種處理方法也有較爲明顯的弊端,首先是浪費,被用於提取浸泡液的生豆不能再用於生產,導致低因咖啡豆的成本很高,價格居高不下;其次是活性炭提取咖啡因,活性炭是種很霸道的物質,可有效過濾除臭,比如自來水淨化,比如竹炭面膜,比如操碎了心的媽媽放在青春期運動少年運動鞋裏的竹炭除臭鞋墊……,連青春期躁動少年的荷爾蒙都能吸收,區區咖啡因自然不在話下,就算使用了一些特殊方法針對咖啡因去萃取過濾,也依然會帶走一部分的風味因子,很大程度上造成低因咖啡的風味不盡如人意。
脫因過程是針對咖啡生豆而非熟豆,脫因過程中最困難的就是如何實現去除咖啡因而不影響到咖啡中其他的物質,如糖類、纖維素、蛋白質、檸檬酸和果酸等。
咖啡本身含有超過1000種化合物,也正是這些化合物造就了咖啡多變的層次感及香氣。但是無論哪種處理方式,都會或多或少影響到咖啡的風味,正所謂有得必有失,但這依然阻止不了咖啡控們對咖啡的熱愛,對吧!
