<span style="font-size:14px;">種植<a href="https://www.gafei.com/kafeidou/20181205127588.html">藍山咖啡</a>的藍山山脈位於牙買加島上，海拔高達2100米以上。山脈上鋪滿肥沃的火山土壤，同時由於該山脈被加勒比海四周環繞，這裏的空氣十分的乾淨且溼潤，爲咖啡樹提供的充足的水份和養分。藍山咖啡的種植可以追溯到18世紀初，但是真正聞名海外是在1953年開始。</span><br />

<span style="font-size:14px;">由於牙買加地少，要種植出好喝的咖啡只能在高海拔地區。而整個島上也只有藍山山脈又這樣的海拔，所以品質好的咖啡豆實際產量並不多。於是當時剛成立沒幾年（1948年）的牙買加咖啡產業協會（CIB）開始對整個藍山山脈的咖啡生產進行了詳細的劃分，爲的就是賺更多的錢，把有限的咖啡豆分成不同等級出售不同的價格。當時CIB主要制定了等級劃分、種植技術的升級、藍山咖啡豆分級、出口藍山咖啡豆品控以及證明。<br />
<br />
<strong>/等級劃分</strong><br />
整個藍山山脈海拔爲2256m，當地政府規定海拔1700m以上的區域爲自然生態保護區，不能從事經濟農作物種植。而我們都知道好喝的咖啡豆離不開高海拔帶來的晝夜溫差減慢生長速度，從而形成更多的咖啡風味，於是CIB規定<strong>只有在910m-1700m種植的咖啡樹才能被稱爲「牙買加藍山咖啡」</strong>。而海拔460m-910m的只能以「牙買加高山咖啡」名義出售；460m以下的只能以「牙買加優選咖啡」名義出售。</span><br />

<span style="font-size:14px;"><strong>/種植技術上的升級</strong><br />
牙買加一開始種植的咖啡是有着優秀基因的鐵皮卡品種，而種植技術也是有英國提供。英國在咖啡種植上研究了300年，所以技術上沒什麼問題，就是缺少了標準化。所以CIB嚴格落實了每項種植指標以及加入了更多現代化種植技術，是品質得以提升。</span><br />

CIB對藍山咖啡豆的品控也是十分嚴格。藍山一號咖啡豆要求咖啡果實大小爲17/18目，瑕疵豆比例不超過2%；藍山二號咖啡豆豆要求咖啡果實大小爲16/17目，瑕疵豆比例不超過2%；藍山三號咖啡豆豆要求咖啡果實大小爲15/16目，瑕疵豆比例不超過2%；還有一個藍山源都要求在果實大小10MS，瑕疵豆比例不超過2%。<br />

<strong>爲什麼大家都認識在藍山咖啡？</strong><br />
<br />
當然，制定這些計劃看着美好，實際需要花很大一筆錢，然鵝牙買加政府沒有錢啊，於是日本在1696年伸出了援助之手，並在往後很多年裏大量收購牙買加咖啡豆，牙買加爲了感激日本的援助，在2000年前，幾乎90%的藍山咖啡都被日本人買走。<br />
<br />
而中國大陸最早的一批藍山咖啡豆引進則是在2004年由咖露夢生豆公司引進，創立該公司的是一位日本人，在中國也有分公司，所以當時在中國要喝上一杯藍山咖啡，也不是不可能，但是要在迎賓酒店裏纔有機會目睹藍山咖啡豆陣容，因爲需求量不大而且很貴！這也導致能喝上藍山咖啡的沒幾個人…喝過的人看着如此珍貴的咖啡豆，肯定都說好！於是就這樣一傳十十傳百，傳到家家戶戶沒喝多都聽說很好喝的情景猶如神話般的存在。今時不同往日，現在購買藍山咖啡豆並不難，因爲在2011開始，就有了牙買加直接入口到中國，但是！買藍山咖啡豆的時候一定要擦亮雙眼！！<br />

<strong>如何判斷自己買的<a href="https://m.gafei.com/views-132453">藍山咖啡豆</a>是真是假？</strong><br />

<strong>「藍山咖啡豆品種」</strong><br />
而我們所能品嚐到的正宗藍山咖啡豆100%爲鐵皮卡咖啡種。鐵皮卡作爲最古老的咖啡品種，其乾淨的口感一直深受老饕們的喜愛。通過前街杯測，正宗的藍山一號咖啡豆風味十分平衡，酸甜苦分配得恰到好處，誰也不搶誰風頭。鐵皮卡品種的咖啡樹末端的樹枝很長，分枝少，而花是白色的，開在葉柄連結樹枝的基部，其成熟的咖啡果實呈鮮紅色，外形似櫻桃，咖啡豆豆體呈橢圓形或瘦尖形。</span><br />

牙買加是最後一個使用木桶裝載咖啡豆出口的國家。出口的規格共有三個：70公斤、30公斤、15公斤。<br />
<br />
<strong>「真正的牙買加藍山咖啡有證書認證」</strong><br />
一開始牙買加只堅持出口烘焙後的藍山咖啡豆，但由於長途跋涉，烘焙好的咖啡豆在運輸過程中咖啡風味也會消散，最後到消費者手裏的咖啡豆可能只剩下木質味道了。所以後來牙買加政府“鬆口了”，允許出口藍山咖啡生豆。證書也分爲三種：牙買加咖啡局頒佈的品質證明證書；藍山咖啡生產廠家頒佈的授權銷售證書藍山咖啡由4個牙買加政府許可的加工生產商經銷，16個許可出口商出口）；牙買加藍山咖啡原產地證明。品質證明證書都表明時間，數量。由牙買加咖啡局隨機在送檢的藍山咖啡裏面抽取一個包裝，進行檢驗，如果滿足藍山咖啡的條件，即頒佈證書。</span><br />

<strong>前街咖啡出售的藍山一號咖啡豆來自藍山山脈的克利夫頓莊園。</strong>克里夫頓莊園是牙買加僅有 “熱帶雨林”標誌的藍山莊園，種植海拔1310m。克里夫頓莊園可以說全藍山地區最具創新的莊園，在2019-2020年度先後推出藍山一號咖啡的日曬版本與藍山瑰夏咖啡。在此之前，藍山對外出售的咖啡均是水洗處理的鐵皮卡種。前街咖啡也有出售過日曬處理藍山咖啡豆以及藍山瑰夏咖啡豆，但批量不多很快售罄，只有水洗處理的藍山一號咖啡豆前街咖啡長期出售。<br />

<strong>前街咖啡藍山一號水洗處理咖啡豆風味表現</strong><br />
<br />
藍山一號咖啡風味十分乾淨，非常適合手衝的形式。前街推薦衝煮濾杯：KONO濾杯，衝煮水溫：88-87℃，衝煮粉量：15克，衝煮粉水比：1:15，咖啡豆推薦研磨度：中等研磨（BG 6W：中國標準20號篩網通過率45%）。</span><br />
