小編在跟朋友聊天的時候聊到細粉這個東西,小編的不少朋友對細粉真的是聞之色變,一聽到細粉就想到過萃,但也有對細粉情有獨鍾的,比如Matt Perger的細粉攪拌法。細粉這玩意到底是個什麼樣的存在呢?
咖啡的研磨被分爲什麼哪幾種?
我們大致上將咖啡的研磨度分爲以下幾種:
1、極細研磨。這種一般如糖粉般粗細,多用於做意式咖啡或者是土耳其咖啡。
2、細、中細、中粗研磨。以白砂糖爲基準,這個適用範圍就比較廣啦!手衝、愛樂壓、虹吸等等,按照不同的烘焙程度以及煮制方式都會有着不一樣的研磨度。
3、粗研磨。如粗砂糖,大多用於法壓壺萃取。
細粉
有一些人把細粉定義爲直徑小於一定尺寸(比如說50微米)的顆粒。近來,另有一些人認爲細粉所代表的是特定區域的粒子分佈曲線,但其實細粉的形狀不規則,很少呈現出規則的球形。
細粉對手衝的影響
還記得我們前一篇公衆號聊過萃取嗎?影響萃取的因素之一就有研磨度,磨的越細,咖啡粉容易堆積在濾紙上,萃取阻力較大,所以流速較慢,萃取時間較長。咖啡所含物質的萃取率高,衝煮出來的咖啡也較濃烈;磨的越粗,粉層空隙越大,與熱水接觸的咖啡粉較少,萃取阻力較弱,咖啡滴落速度較快,萃取率較低,所以咖啡風味也較淡。
對細粉聞之色變,大抵是因爲細粉過多堵塞了下水孔而導致的咖啡液流不下去,從而致使咖啡粉萃取出來的物質過多,咖啡喝起來帶着明顯的焦苦味、雜味以及澀味。但是我們真的需要這樣視細粉如猛獸嗎?
以【巴拿馬 艾麗達】爲例,小編分別衝了壺篩粉跟沒有篩粉的,對比一下會有什麼區別!
①入口紮實的酸質,柑橘、青橘的酸調,中段略帶堅果,果脯、焦糖的甜感,尾段茶感,整體是均衡且柔和的感覺。
②發酵氣息濃郁,入口柑橘的風味,酸甜震,果汁感明顯,中段烤杏仁,焦糖甜感,尾段略帶柚子皮,沒有茶感,均衡感會比①高些,風味層次變化豐富。
小編認爲,其實細粉也不會像猛獸般可怕啦!雖然說由於細粉的存在,水與咖啡粉的表面接觸過多,細粉會優先萃取出太多不必要的雜質,甚至連苦味都出來了。當然啦,研磨均勻的咖啡粉是很重要的,畢竟研磨的均勻了萃取才會均勻呀,但是這並不代表着細粉不可取,畢竟適當的細粉可以給一杯咖啡帶來更多層次的風味。當然啦,如果細粉太多已經嚴重影響到自己的衝煮的時候,小編建議還是換磨吧,畢竟一個好的磨是很重要的呀~

</div> <div> <span style="font-size:16px;">如果請教著名的廚師:要如何煮出美味的佳餚?相信他的回答中一定會有“新鮮的食材”這ㄧ項,因爲只要是好廚師就不會使用不新鮮、過期的材料來烹煮他的拿手料理。,咖啡亦然,一杯好咖啡的第一步就是新鮮的咖啡豆。</span></div> <div> </div> <div> <span style="font-size:16px;">何謂新鮮的咖啡豆?請參考下表所列出的咖啡豆保存期限,或許你會因爲其條件的嚴苛而感到驚訝,但事實上,咖啡豆從烘焙完成之後就開始逐漸喪失它的新鮮度,隨著與空氣接觸的時間不斷增加,咖啡豆中美好的物質也逐漸減少,尤其是已研磨後的咖啡豆更爲嚴重。爲什麼磨成粉的咖啡豆保存期限只有短短的5-10分鐘?最主要的原因正是因爲磨成粉的咖啡豆表面面積變得非常巨大,所以氧化的速率也相對增快數倍,不用多久咖啡豆就會因爲氧化而通通變質,更不用說想要煮出好咖啡了。</span></div> <div> </div> <div> <span style="font-size:16px;">咖啡豆種類 保存期限(極限)</span></div> <div> </div> <div> <span style="font-size:16px;">未烘焙的咖啡生豆 1-2年</span></div> <div> </div> <div> <span style="font-size:16px;">所以,強烈建議任何的咖啡都一定要煮之前才研磨,而且一次只磨一杯所需要的量!即使有十杯要煮也等煮完一杯後再磨下一杯,不要預先磨好ㄧ堆來節省煮咖啡的時間。所以當你下一次走進一家陌生的咖啡店時,不妨觀察一下店家若是現磨現煮,至少可以放心一半,但若看到店家煮咖啡時是從密封罐裏舀出已經事先磨好的<a href="http://www.gafei.com/kafeifen/20180314116278.html">咖啡粉</a>,那就得好好考慮一下是否要喝這家的咖啡了。</span></div> <div> </div> <div> <span style="font-size:16px;">從現磨現煮的角度來看,購買已經磨好的咖啡豆顯然是最難保持新鮮度的方式,最常見的狀況是:到咖啡店買了一磅的咖啡豆之後請店家代爲研磨。想想看,一磅的咖啡豆要多久才喝完?一個禮拜?或是超過兩個禮拜?不管多久喝完,光是回家的路就已經超過10分鐘的新鮮期限了,用這種新鮮度盡失的咖啡豆怎能期望煮出好喝的咖啡呢?</span></div> <div> </div> <div> <span style="font-size:16px;">同樣的道理,也不必迷信國外的名牌咖啡豆,尤其是已經研磨好的咖啡豆——即使廠商在廣告中不斷地強調:我們非常注重咖啡豆的新鮮、每週空運、全程低溫充氮保鮮……等等,但是擺在眼前的就是不折不扣的過期咖啡豆。所以在此建議各位,下回出國旅遊時大可不必買烘焙好的咖啡豆(粉)回來送朋友,相信理由已經不再需要贅述了。</span></div> <div> </div> <div> <span style="font-size:16px;">二、 正確的研磨</span></div> <div> </div> <div> <span style="font-size:16px;">由於對於新鮮的堅持,所以必須在衝煮前才研磨咖啡豆,因此磨豆機就成了必要的工具,再此先提出一個很重要的觀念:好的磨豆機比好的咖啡機更重要!在追求好咖啡的道路上,一臺夠水平的磨豆機是絕對必要的配備。</span></div> <div> </div> <div> <span style="font-size:16px;">爲什麼磨豆機那麼重要?所謂煮好咖啡的真義是“正確的萃取咖啡豆中的物質”,要達到這個目的關鍵在於“精確控制咖啡研磨的粗細與衝煮的時間”,這兩者之間有著密不可分的關係。爲什麼要控制衝煮時間?因爲“咖啡豆的油脂與芳香物質會較先被水溶解,咖啡因與苦澀物質則較慢”,所以煮咖啡時,從水與咖啡粉接觸的那一刻開始,要在適當的時間停止萃取,儘快把煮好的咖啡與咖啡粉分哩,避免那些我們不要的物質從咖啡粉進入咖啡中。</span></div> <div> </div> <div> <span style="font-size:16px;">不同衝煮方式與習慣都有其適合的研磨粗細程度,以衝煮方式區分,Espresso適合細研磨,濾衝式與賽風壺適合中度研磨,而法國濾壓壺則適合粗研磨。如以咖啡粉在水中浸泡的時間長短而言,時間越長,研磨顆粒就要越粗;時間越短,研磨顆粒就要越細。但是這只是ㄧ個大原則,平常不妨多多嘗試,一定可以找出最適合自己的衝煮方式與習慣。</span></div> <div> </div> <div> <span style="font-size:16px;">爲了正確萃取出咖啡豆中的物質,除了將咖啡豆磨成不同程度的粗細之外,使顆粒大小均勻一致也十分重要,如果研磨的粗細不一,由於細的咖啡粉末被水萃取的速率比粗的咖啡粉末還快,就會產生萃取時間無法控制的問題,也就是在同樣的時間哩,細的咖啡粉末因爲在水中浸泡時間過長,而已經過度萃取時,粗的咖啡粉末卻因爲浸泡時間不夠,而導致萃取不足。這樣的咖啡肯定不會是一杯好的咖啡。</span></div> <div> </div> <div> <span style="font-size:16px;">所以要煮出一杯好的咖啡就得有一不可以研磨出均勻咖啡粉末的磨豆機,否則一切都是空談,而這就是爲什麼好的磨豆機比好的咖啡機重要的原因。</span></div> <div> </div> <div> <span style="font-size:16px;">三、 良好的水質</span></div> <div> </div> <div> <span style="font-size:16px;">水有多重要?只要看一杯咖啡中水佔的比例超過95%就知道了。什麼樣的水適合拿來衝煮咖啡?越乾淨的水越好嗎?其實不見得。與泡茶一樣,太乾淨的水泡出來的茶不會比山泉水泡出來的好喝。同樣的道理,若水中含有適量的礦物質,可以使咖啡的口感更爲豐富。</span></div> <div> </div> <div> <span style="font-size:16px;">目前一般家中的水大多是自來水,但是因爲自來水的品質並沒有達到讓人放心的的水平,所以不要說拿來衝煮咖啡,連拿來當作飲用水的人都不多了,最主要的原因當然是自來水中的消毒藥劑殘留的問題,這些消毒用的氯殘留在水中不但影響水的品質,也會造成衝煮出來的飲料口感不佳。因此許多人都會加裝RO逆滲透系統或是蒸餾水機等等,經過這些機器所製造出來的水,雖然水質極爲純淨,但是也就是這些水實在太乾淨了,所以是否適合拿來衝煮咖啡倒是一個值得思考的問題。</span></div> <div> </div> <div> <span style="font-size:16px;">筆者曾經做過ㄧ個實驗:分別用三種不同的水,以塞風壺來煮同一種咖啡。結果所有在場試喝的朋友都可以清楚指出哪一杯比較甘甜好喝;哪一杯的味道貧乏無奇,這些朋友事先都不知道我用哪幾種水,也不知道用水的順序,但是大家都覺得最平淡的正是RO逆滲透水!反倒是簡單的家用濾水器所濾出來的水口感較佳,這種常見的濾水器據稱可以濾除自來水中的有害物質但是保留水中的礦物質,而且價格便宜、使用方便,廣受咖啡玩家愛用。而口感最好的則是一瓶法國進口的礦泉水,比較過RO水煮出來的咖啡的朋友都異口同聲的說:礦泉水咖啡比RO水咖啡的味道複雜,而且更甘甜好喝。</span></div> <div> </div> <div> <span style="font-size:16px;">但是一定要用進口的礦泉水嗎?那倒不一定,我試過許多國產的礦泉水也都很不錯,若是覺得礦泉水的成本太高,用前面所提到的簡單濾水器也可以,只要記住:水不要濾得太乾淨,更不要直接使用未經過濾的自來水。</span></div> <div> </div> <div> <span style="font-size:16px;">四、 合適的水溫</span></div> <div> </div> <div> <span style="font-size:16px;">偶而會看到有人用剛從火爐上移開、還在沸騰的水來衝煮咖啡,當這樣的景象出現時,我總會在腦海中想像那杯咖啡的滋味,想著想著舌根便會有一股苦澀的味道冒出來……因爲咖啡並不適合用100度的滾水去衝煮,這樣不但會燙壞咖啡還會讓煮出來的咖啡苦澀得無法下嚥,只好靠加入大量的糖與奶精調味。</span></div> <div> </div> <div> <span style="font-size:16px;">事實上適合衝煮咖啡的水溫大約在攝氏85度到95度之間,而衝煮溫度的高低取決於咖啡豆烘焙的程度,大原則是:烘焙深的豆子用較低的溫度衝煮;烘焙淺的的豆子則用較高的溫度。如果一開始不知道用幾度的熱水,建議從90度開始,這個溫度幾乎適合大部份的咖啡豆,之後可再依各人喜好調整溫度。</span></div> <div> </div> <div> <span style="font-size:16px;">爲了準確判斷溫度,一支溫度計在這裏是必要的,如果因爲溫度問題而需要調整衝煮溫度時也有依據。其實只要不是剛剛煮開的水,對咖啡來講應該都不會過燙,像是熱水瓶裏的熱水平常溫度大約保持在90度左右,直接就可以拿出來沖泡咖啡。至於剛剛煮好的滾水只要放置一下,使其自然降溫就可以了。</span></div> <div> </div> <div> <span style="font-size:16px;">如果你對於溫度的穩定真的很吹毛求疵,其實用來衝煮的熱水還可以比預定的溫度高出3-4度,因爲你必須計算熱水倒入冷的沖泡器時所產生的溫降,所以高出幾度是合理的預估。</span></div> <div> </div> <div> <span style="font-size:16px;">五、 溫柔的衝煮</span></div> <div> </div> <div> <span style="font-size:16px;">在筆者的觀念裏面,不論是哪一種煮法都有ㄧ個共通要點:衝煮咖啡試水與咖啡豆之間的交互作用,萃取的動作應該由水來完成,而不是靠衝煮者的力量!而衝煮者唯一要做的事情就是讓每ㄧ個咖啡粉的顆粒能夠均勻地被水包圍,剩下的工作,就交給水去完成吧!</span></div> <div> </div> <div> <span style="font-size:16px;">既然衝煮咖啡是水與咖啡粉的的交互作用,衝煮者要如何幫助咖啡粉被水完全包圍?訣竅就是:溫柔的衝煮。除了Espresso 在進入衝煮程序之後,衝煮者真的插不上手之外,其他不論是塞風壺的攪拌或是濾衝壺的沖水,請用對待情人的心態,溫柔的進行衝煮的程序,也就是說不管做什麼動作,都請溫柔的做——溫柔的攪拌、輕柔的注水,千萬別像洗水彩筆一般,把攪拌匙伸到咖啡壺中快速粗暴的攪拌,讓一堆不愉快的味道一下子就溶進咖啡中;也不要用滾燙的水柱,毫不留情的直接衝擊在咖啡粉上,這樣做除了灼傷咖啡豆之外什麼幫助都沒有。總之,如果能帶著“想煮出一杯好咖啡”的心情來衝煮,整個過程自然會非常的穩定與溫柔;若是你只是以例行公事的態度衝煮,也不打算在喝的過程裏面挖掘新體驗,那動作自然不會溫柔,也會出現一些不穩定的狀況,這許多的小細節加在一起便容易得到苦澀的結局。</span></div>
