作爲陪伴了一代人成長的產品,速溶咖啡的熱度已經開始下降。近日,相關數據報告顯示,在中國,喝速溶咖啡的人逐漸減少,其市場增速放緩。專家表示,隨着消費場景、消費人羣的升級,加上實體咖啡店數量激增,速溶咖啡的優勢開始流失。不過,消費升級也倒逼產品升級,一些高端化、個性化、定製化、規模化的產品將脫穎而出。</div>

咖啡市場增速仍快 非液體類則放緩</div>

與其他在家飲用的咖啡類型相比,速溶咖啡在中國咖啡市場中仍然佔有重要位置。然而,據巴西評論NegócioCafé的最新報告顯示,速溶咖啡正在失去消費者的興趣以及其市場份額——消費已升級至更高品質的咖啡類型。就中國市場而言,2016年32%的中國消費者表示曾喝過速溶咖啡,而到2017年這一比例降低至26%。</div>

而從市場規模來看,來自英敏特的報告顯示,2018年,中國咖啡零售市場的總銷售額將達到約163.04億元,較2017年增長約14.6%。到2023年底預計將達到291.59億元,年均複合增長率爲12.3%。其中非液體咖啡(包括速溶咖啡和現衝咖啡)零售市場的銷售量增速將慢於銷售額增速。英敏特預計中國速溶咖啡市場的零售總額在2017——2018年之間將增加6.2%,達到9.018億元。然而,英敏特同時預測市場增長率在2022——2023年間將放緩至4%。</div>

中國食品產業分析師朱丹蓬表示,隨着整個咖啡市場消費氛圍,消費場景,消費檔次以及消費人羣的升級,2018年速溶咖啡市場較2017年下滑接近10%。在可卡咖啡總經理吳永惠看來,在二三十年前,國內市場上只有速溶咖啡,但是隨着社會進步,現在速溶咖啡消費會慢慢減少,健康的飲品纔是大衆的選擇,“很多人都認爲速溶咖啡就如同瓶裝飲料”。此外,他認爲速溶咖啡市場會逐漸趨向三四線城市發展,一二線城市會變少。</div>

“速溶咖啡市場下滑的背後是門店咖啡暴漲,對於整個咖啡行業來說,其實更是一個良性發展與升級。”朱丹蓬告訴記者。</div>

近幾年,國內咖啡實體門店數量激增,以星巴克、太平洋、瑞幸等爲代表的品牌不斷擴大門店佈局,到咖啡店裏喝咖啡,也成了新一代消費者的消費習慣。</div>

英敏特報告顯示,儘管速溶咖啡、即飲咖啡和現衝咖啡一直是中國消費者喜愛的前三大咖啡類型,但即飲咖啡的重要性日益突顯,估計在2018——2023年間,即飲咖啡零售市場的銷售量年均複合增長率約爲15.5%。該市場的銷售量2018年將達到2.24億升,到2023年將增至4.6億升。</div>

英敏特方面認爲,速溶咖啡的增速放緩勢不可擋,但這對中國咖啡市場的未來發展或許是利好消息,因爲這一變化主要是消費升級的結果,而消費升級趨勢促使消費者轉向現衝咖啡和即飲咖啡飲。</div>

雀巢方面也表示,如今,咖啡店在中國增長迅速,對培養國人的飲用習慣和文化起到了積極作用。除此之外,戶外消費與新零售渠道開始興起,例如:便利店,全家,7-11,加油站,網吧等,而戶外消費佔咖啡消費增長的78%,成爲了咖啡消費新的增長機會。</div>

未來競爭考驗創新升級能力</div>

“速溶咖啡面臨最大的一個痛點就是缺乏檔次,因爲檔次決定價格。檔次不夠,價格低廉,渠道商缺乏經營品類動力,面對消費者的服務與推廣也逐漸減少,因此形成惡性循環。”朱丹蓬表示,當速溶咖啡呈現的形式不能改變的時候,它只能改變檔次、場景、渠道和消費人羣。未來應該更多進行創新升級,以及在產品差異化上下功夫,否則即使在整個咖啡人羣不斷疊加的紅利下,也很難享受到紅利。</div>

記者瞭解到,雖然速溶咖啡整體市場增速放緩,但是雀巢所有品類都保持一定增長,其中很重要的原因便是不斷創新。例如,2018年雀巢咖啡圍繞“咖啡趣味學”開展了一系列活動——利用多種創意性的口味嘗試帶來全新的體驗,以此培養咖啡文化,從而開拓速溶咖啡增長。</div>

面對速溶咖啡市場的整體下滑以及咖啡門店的衝擊,雀巢方面表示,現在咖啡品類越來越多,咖啡也有了更多的選擇,可以滿足消費者更多的需求。雖然更大的市場還是原味咖啡,但是更多的創新與品種也不斷湧現,比如椰香、海鹽、抹茶等口味,以此帶動口味咖啡市場。而且咖啡已不再侷限於熱飲,冷飲咖啡成爲新興、增長迅速的咖啡品類。隨着經濟快速發展,帶動消費升級,高端化已經成爲了消費新趨勢。</div>

朱丹蓬也表示,未來速溶咖啡將往高端化、個性化、定製化、規模化發展。一些不具備創新升級能力,不具備全國佈局能力的中小型企業可能會遭到整個市場的淘汰。</div>
