這是介於日曬、水洗兩種處理之間的方法,可以再分兩類:去皮日曬法及蜜處理法。兩類處理法基本上十分相似,都是先如同水洗處理一般,去除咖啡櫻桃的外皮,但跳過水洗處理的“水池發酵、清水沖洗”過程,直接拿到陽光下嚗曬。雖然看來方法差不多,卻因爲其中一項重要差異,造成兩種大不相同的風味,值得分開來說明。</span></span></p>

<span style="font-size:14px;"><span style="color:#000000;"><strong>半日曬處理過程</strong><br />
1.先將咖啡果實放入大水槽內,去掉浮起的果實,然後將下沉的果實放入果肉篩除機內去掉果肉。將未成熟的果實更好地剔除出來,更重要的是讓咖啡豆日曬乾燥時不再是帶着果肉,而僅僅是裹着一層果膠,這樣更有利於控制之後的發酵過程。<br />
<br />
2.將果實去除果皮果肉後可以看到黃色的果膠,將帶着果膠的咖啡果實進行日曬(咖啡豆去除果肉後,會有層粘稠的膠狀物稱爲果膠)。<br />
<br />
3.晾曬到豆子的含水量達到了10.5%-12%後,進行去殼。<br />
<br />
4.最後在豆子裝袋出口前進行拋光打磨工序。<br />
<br />
這種處理法使用的水量比水洗法少得多,而且部分作法類似水洗處理(去果皮及果肉),部分作法類似日曬處理(不經水池發酵),所以也被稱爲半水洗法(semi-washed method)。<br />

<span style="color:#000000;">1.適用於商業大量運作(巴西多用此法),半日曬的處理方式相對簡單又易於操作,即可節約用水,又保護環境。<br />
<br />
2.去除咖啡果皮果肉的過程中,熟透的果肉會容易去掉,未成熟的青果果皮不易處理掉,因此可以進行第二次篩選,以過濾未成熟的果實,統一咖啡果實的成熟度。相比日曬方式,挑選後的咖啡果實幹淨度和成熟度會提高,會帶來更均一口感的咖啡。<br />

3.乾燥的時間會縮短,節省時間成本,增加更多附加價值。<br />
<br />
4.成熟度相對一致,更有利於保存和統一咖啡的生豆品質。<br />
<br />
這種方法起源於巴西,前街咖啡的巴西口糧豆就是使用該處理法處理的。<br />

<strong>前街咖啡衝煮建議</strong><br />
烘焙程度較深的咖啡豆,以凸顯咖啡的醇厚感,前街咖啡會選擇Kono濾杯來衝煮。Kono濾杯的特點在於有浸泡的功能,可以利用浸泡來萃取更多的咖啡物質,提升醇厚口感。Kono濾杯肋骨不多且位於低端,可以使濾紙緊貼在濾杯上以達到限制氣流的效果,從而使水流速度減緩增加水粉接觸時間。</span></span></p>

<strong>蜜處理(Honey processing)</strong></span><br />
<a href="https://m.gafei.com/views-133484 https://www.gafei.com/"><span style="color:#000000;">蜜處理</span></a><span style="color:#000000;">起源哥斯達黎加,這種處理方法在薩爾瓦多和哥斯達黎加等產地非常普遍。其本質是參考巴西的半日曬處理而進行改良而成。<br />
<br />
蜜處理是當地的咖啡農爲了提高咖啡豆的品質而嘗試的方法,隨後慢慢傳播到其他國家。那麼,哥斯達黎加的農夫們爲何要嘗試這種加工方法呢?因爲農夫們的收入主要靠咖啡豆的交易,品質越好的咖啡豆可以帶來更高的利潤,因此農夫們不斷嘗試新的加工法一點都不足爲奇。對於一個咖啡產地來說,可以提高咖啡豆品質的方法有三:其一,改善加工方法;其二,更換種植的樹種;其三,改善農場的土質,就是遷徙農場。但就好像我們萃取咖啡時,在改變咖啡粉量與研磨度之前,會首先調節萃取量、壓力、溫度一樣,我們會首先選擇改變儘量可以節約時間和費用的條件。對於農夫們來說改變樹種和遷徙農場是費時費力的,所以改善加工方法就成了他們的首選。</span></span></p>

1.採摘後的咖啡果實會被收集進行篩選,挑選出品質合格優良的咖啡果實。<br />
<br />
2.篩選後的咖啡果實會被放入咖啡去皮機器進行去皮處理,這一步驟會去除咖啡果實的表皮以及果肉,保留果膠層。果膠部分是咖啡果糖分含量最高的部分,也是咖啡處理發酵的重要組成部分,可以說這個部分80%的決定了處理過程中營養的補給。黃蜜保留60%的果膠,紅蜜保留75%的果膠,黑蜜幾乎不去除果膠。保留越多的果膠的處理方式咖啡最終的風味會越豐富、甜度更高。<br />
<br />
3.與水洗處理不同,蜜處理會保留部分果膠進行乾燥處理。乾燥處理會將咖啡豆的含水率降到11%左右,時間會在18到25天左右,會依據氣候及處理者的經驗所決定。<br />
<br />
4.乾燥完成後的咖啡豆會被裝袋運送到倉庫進行儲存,直至出口運輸前才進行脫殼處理去除咖啡羊皮層。<br />
<br />
<strong>蜜處理風味表現</strong><br />
蜜處理法的咖啡豆風味較佳,酸味與甜味均衡,且同日曬法因爲有經過日曬,咖啡豆本身的香氣也會被放大,醇味濃厚。<br />
<br />
<strong>蜜處理的色彩分級</strong><br />
<br />
如今,種植者會根據咖啡的顏色爲蜜處理後的咖啡生豆分級。共有3級:黃、紅和黑。顏色的深淺變化源於咖啡在乾燥過程中光照時間的長短。<br />
<br />
黃色蜜處理咖啡生豆的光照時間最長。光照時間長意味着熱度更高,因此這種咖啡在1周內便可乾燥完成。一般情況下,咖啡的乾燥時間視當地的氣候、溫度和溼度條件而定。紅色蜜處理咖啡生豆的乾燥時間爲2-3周,通常由於天氣原因或置於陰暗處所致。若天氣晴朗,種植者爲遮蔽部分陽光,以減少光照時間。黑色蜜處理咖啡生豆放在陰暗處乾燥的時間最長,光照時間也越短。這種啊咖啡的乾燥時間最少爲2周。黑色蜜處理咖啡生豆的處理過程最爲複雜,人工成本最高,因此價格最爲昂貴。</span></span></p>

根據日曬的時間與果膠的量不同而區分三者,且果膠與內果皮的量決定了日曬的時間。“黃蜜”是帶有25%的內果皮、“紅蜜”50%、“黑蜜”100%。因此,從“黃蜜”到“黑蜜”,需要的乾燥時間更長,管理要求也越苛刻。<br />
<br />
如果一定要挑選出三者中的優劣,味道最佳的則是“黑蜜”,因爲內果皮的量最多,口感也就最豐富、更強烈。那麼爲什麼要生產“黃蜜”和“紅蜜”呢?咖啡農夫們也需要從商業的角度考慮,也就是說,生產“黑蜜”需要其他種類兩倍的乾燥牀,而且需要投入更多的時間、人力與精力;而且並不是所有買家都具有購買“黑蜜”的經濟能力,所以生產“黃蜜”和“紅蜜”可以說是爲咖啡生產環境做出的選擇。<br />
