海拔2600m的首都波哥大<br />
<br />
哥倫比亞的國土有1/3爲山嶽地區。 <br />
身爲赤道國家因此咖啡均在海拔較高的山嶽地帶生產。從日本長途跋涉到達首都波哥大！是在海拔2600ｍ的高原上建立的大城市。下了飛機才感覺到自己的心臟噗通噗通的哀號着。<br />
（誇張了一點。）<br />
爬樓梯時更能感受到波哥大之旅的艱辛。<br />
<br />
哥倫比亞的咖啡大多是小規模農家,每個農家加工到除去果肉的狀態、再由農協收集精製、然後由出口業者輸出國外。近年來哥倫比亞咖啡繼巴西之後將重點放在產量上、在ＦＮＣ＜哥倫比亞生產者聯盟＞的指導下着力於現代化農業技術及產量大抗病性強的品種開發。近年來常聽到哥倫比亞咖啡的味道不如以往、對重視產量的咖啡產業來說是無法避免的吧・・・。 <br />
<br />
哥倫比亞咖啡約70%是Variedad Colombia種、是收穫量多且抗病性強的品種但是屬於阿拉比卡種與羅布斯塔種的混血品種。其中雖然也有美味的咖啡、但是與純阿拉比卡種比較起來質量還是稍遜一籌。<br />
此種咖啡開發至今已20年、開始感染了鏽斑病。<br />
<br />
因此由Variedad Colombia與羅布斯塔種的混種『Castillo』已被開發出來。<br />
<br />
在當地分享了『Castillo』可是說到味道・・・。這杯咖啡我實在喝不下去。<br />
<br />
曾經被贊爲溫和的哥倫比亞的美味哥倫比亞咖啡到底到哪裏去了・・？<br />

<strong>尋求美味的哥倫比亞咖啡</strong><br />
<br />
咖啡是一種農作物。根據生產者的意識與土壤會產生相當大的差別。<br />
<br />
我所訪問的咖啡農園當中規模較大的農園均種植多種品種、採用現代化農業方法、給人一種對咖啡事業非常專業可靠的感覺。當然也包括Variedad Colombia。<br />

最高級的哥倫比亞咖啡在距離波哥大不到幾小時的車程、玻雅卡縣的小村落中栽培着。這個村落中小型農家有100間以上。一座山上幾間的農家點散分佈、昔日以來拘限於在來種『Tipica』、極小量的持續生產着。『Tipica』的最大魅力也就是咖啡的最大魅力、就在其優越的香氣與甜味兼備的地方。這些農家的咖啡樹從祖先世代傳承、老樹幹枯後咖啡櫻桃自然落下又長成新的咖啡樹、真的是『放任栽培』。<br />
<br />
此外、因爲農家大多貧窮買不起肥料及農藥。只有使用自家制造的有機肥料。<br />
<br />
不得不成爲『完全有機環境』下培育的咖啡樹在村裏的優良土壤中安定的被栽培出來。</p>
