<p>
	<span style="font-size:16px;">咖啡館買豆子的5種途徑，你是哪種？</span></p>
<p>
	<span style="font-size:16px;">位於杭州一所大學校園內的花Young年華咖啡館，顧客主要是高校學生。</span></p>
<p>
	<span style="font-size:16px;">據店主介紹，他家咖啡豆的主要來源是在網上採購，Seesaw、參差咖啡、豆叔咖啡&hellip;&hellip;這幾個品牌的店鋪基本上都光顧過。</span></p>
<p>
	<span style="font-size:16px;">&ldquo;一般注重品質的咖啡館都會網購，新鮮度、口感更好。可選擇的種類也比較多，既有大牌的供應商，比如lavazza、illy咖啡，還有很多本土品牌。&rdquo;花Young年華的店主介紹說。</span></p>
<p>
	<span style="font-size:16px;">這也是中國幾萬家、中小型咖啡館的縮影。</span></p>
<p>

	<span style="font-size:16px;">▲買豆子的渠道很多樣，不固定</span></p>
<p>
	<span style="font-size:16px;">根據《咖門》2016年對國內咖啡館現狀的數據調查，中國的咖啡館數量已達到10萬家。而其中，除了第一梯隊的星巴克、太平洋、Costa等以外，全國性的品牌可以說是屈指可數。</span></p>
<p>
	<span style="font-size:16px;">更多的，就是承載着咖啡愛好者夢想的小咖啡館。</span></p>
<p>
	<span style="font-size:16px;">據瞭解，這些小型咖啡館主要有5個購買咖啡豆的途徑：</span></p>
<p>
	<span style="font-size:16px;">1.最早的是選擇本地供應商，這些供應商大多同時供應奶茶、冰激淋等原料，咖啡豆的質量大部分不高，但是價格優惠。</span></p>
<p>
	<span style="font-size:16px;">有咖啡館主透露，20~30元一斤的咖啡豆很是常見；</span></p>
<p>
	<span style="font-size:16px;">2.還有一些專門的設備供應商也提供咖啡豆，因爲有之前採購設備時形成的信任關係，很多咖啡館主也會選擇這部分供應商，他們提供的豆子價格也比較優惠；</span></p>
<p>
	<span style="font-size:16px;">3.一些做咖啡培訓的機構也出售咖啡豆，其豆子的主要購買對象就是參與過培訓後自己開店的學員，比如參差咖啡、雕刻時光咖啡等；</span></p>
<p>
	<span style="font-size:16px;">4.還有一小部分咖啡館，購買生豆自己烘焙，除供應自己店使用外，也通過線上、線下渠道出售，比如明謙咖啡等；</span></p>
<p>
	<span style="font-size:16px;">5.另外，在網上選購也成爲越來越流行的渠道，可選擇的範圍廣泛，會有如lavazza、illy咖啡等知名品牌的豆子，也會有一些小店鋪。</span></p>

	<span style="font-size:16px;">2</span></p>
<p>
	<span style="font-size:16px;">咖啡館買豆子難，烘焙商賣豆子也不易</span></p>
<p>
	<span style="font-size:16px;">2010年，豆叔咖啡開始在線上銷售豆子。</span></p>
<p>
	<span style="font-size:16px;">&ldquo;這七年來，年銷量以20%的速度增長。因爲我們還是規模較小，在營銷上也不是很擅長。&rdquo;據豆叔透露，善於經營的烘焙供應商線上年銷量的增速能達到100%。</span></p>
<p>
	<span style="font-size:16px;">另外，據豆叔觀察，近兩年來，隨着精品咖啡的興起，這些精品咖啡館多開始選擇自己烘焙豆子。</span></p>

	<span style="font-size:16px;">▲自己烘豆子就減少了採購的需求</span></p>
<p>
	<span style="font-size:16px;">比如，目前在北京，就有一些精品咖啡館自己烘焙咖啡豆。而顯然，這會分割掉烘焙供應商的一部分客源。</span></p>
<p>
	<span style="font-size:16px;">在另一方面，普通的小型咖啡館對咖啡豆的價格依然十分敏感。</span></p>
<p>
	<span style="font-size:16px;">有咖啡館主算了一筆帳：如果按1公斤做50杯咖啡（12oz 的中杯）的話，咖啡豆的價格在120-180元／公斤，對整個店面的利潤運營是相對合理的。</span></p>
<p>
	<span style="font-size:16px;">高於180元，咖啡館的承受力就會驟然下降，單杯約4元的豆子成本，再有2.5元的牛奶價格，成本超過20%的預警線，已經沒什麼盈利能力了。所以，超過200元／公斤的咖啡豆天然沒有價格競爭力。</span></p>
<p>
	<span style="font-size:16px;">另外，有些烘焙供應商提供的豆子價格浮動區間較大，像雙十一這種活動時打五折，平時全價，小型咖啡館五折的價格可以接受，但是全價購買，盈利空間被壓縮，咖啡館無法承擔，就會轉而尋找其他烘焙商。</span></p>
<p>
	<span style="font-size:16px;">小型咖啡館對豆子價格的敏感，一方面使其購買豆子存在隨機性，無法和烘焙供應商之間形成長期有效的信任關係；另一方面，價格上的壓力也成爲很多在線上供應的小型烘焙商，不能言說的&ldquo;痛&rdquo;。</span></p>
<p>
	<span style="font-size:16px;">不像lavazza、illy 這樣的大品牌有價格保護機制，由於自身沒有品牌優勢可言，線上小型烘焙供應商常常受到平臺的制約，處於弱勢地位，沒有主動權。</span></p>

	<span style="font-size:16px;">比如，像雙十一這樣的活動，參不參加、參加的話打幾折都是沒有決定權的。</span></p>

	<span style="font-size:16px;">&ldquo;實際上很大的價格波動都是因爲我們品牌小，想做活動得聽電商平臺的，不做沒銷量，做了又賠錢，我們都是硬撐着，賠錢過日子，就算有這麼大的價格浮動，我們咬牙忍着還沒多少銷量的。&rdquo;一位供應商透露。</span></p>

	<span style="font-size:16px;">3</span></p>
<p>
	<span style="font-size:16px;">市場的煎餅越攤越大，需要做出細分了</span></p>
<p>
	<span style="font-size:16px;">據中國諮詢投資網發佈的《2017-2021年中國咖啡行業投資分析及前景預測報告》，中國的咖啡消費量每年增長幅度在15%~20%。</span></p>
<p>
	<span style="font-size:16px;">在美國，咖啡館更多的會選擇供應商烘焙的豆子，爲數不多的幾家品牌烘焙商提供了幾乎全部市場所需的咖啡豆。小的咖啡館也會有這些知名烘焙商的背書。</span></p>
<p>
	<span style="font-size:16px;">畢竟對於烘焙和製作咖啡來說，是兩套專業的理論。專業的事情需要有專業的人來做。</span></p>
<p>
	<span style="font-size:16px;">比如要進行咖啡豆的烘焙，不僅要有穩定的生豆貨源，還要有杯測能力、烘焙場地、相關食品安全許可證件以及能否對生豆進行很好的詮釋&hellip;&hellip;而這些，並不是一個精品咖啡店和小型烘焙廠所能達到的。</span></p>

	<span style="font-size:16px;">過去，國內咖啡行業有這樣一句話：不懂咖啡來開咖啡館的大有人在。如今，隨着消費升級，中產擴容和新生代的崛起，消費者也逐步成長和成熟。</span></p>
<p>
	<span style="font-size:16px;">國內咖啡行業現狀和電子商務的迅猛發展，爲烘焙商們提供了很大的發展空間。但也存在一個不容忽視的問題&mdash;&mdash;食品安全。</span></p>
<p>
	<span style="font-size:16px;">在電商平臺上，對於食品流通的管控越來越嚴格，但是在咖啡豆的管控上，目前卻還處於被忽視的階段，但不難判斷：未來一定是要嚴格規範的。</span></p>
<p>
	<span style="font-size:16px;">參差咖啡創始人王森認爲，未來的電商平臺上烘焙商會形成品牌效應，在此期間會湧現出幾個有實力的供應商品牌。而目前取得了QS證書等食品流通所需要的完備證書的、對品質注重的、重視營銷的烘焙商會有機會崛起。</span></p>

	<span style="font-size:16px;">目前，雖然已經有精品咖啡館開始自己烘焙豆子了，但是對於更多的中小咖啡館來說，未來是以烘焙商供應爲主。這個行業的產業鏈需要整合，優化咖啡行業生態，從而促進咖啡行業更加良性的發展。</span></p>

	<span style="font-size:16px;">據讓咖啡創始人劉讓透露，烘焙也將是其接下來的主攻方向之一。&ldquo;咖啡行業的煎餅越攤越大了，但是市場需要更加細分了。定製化烘焙是個方向。&rdquo;</span></p>
