世界咖啡主要分爲非洲、亞洲、美洲三大產區,每個產區、產地之間的咖啡豆風味、品種、處理方式都各有不同,而前街咖啡的初衷並不是賣豆子,而是嚐遍世界各地的咖啡豆。在這個過程中,前街咖啡的目的是瞭解每一個咖啡產區,同一個產區不同的咖啡品種,同一咖啡品種不同的處理法,擁有不同的咖啡豆風味,並建立相應的數據庫,以及不同咖啡產區間的對比,前街咖啡希望讓更多愛好咖啡的人能夠了解到咖啡的世界。
首先,前街咖啡先向大家介紹關於咖啡生豆與熟豆。
咖啡生豆:沒有進行烘焙的咖啡豆稱爲咖啡生豆,咖啡生豆正常顏色一般爲藍綠、翠綠、淺綠或者黃綠色等。
咖啡豆外表的一層我們稱爲羊皮紙,把它去掉就是我們還沒有烘焙的咖啡豆。
咖啡熟豆:經過烘焙的咖啡生豆稱爲咖啡熟豆。
十六個著名產區咖啡豆
一、巴西 (南美)
自1960以來,巴西咖啡種植一直位居世界榜首,年均產量爲2460萬袋(每袋60公斤)。根據美國農業部2002年11月報告,巴西咖啡的實際產量2002年應該爲5160萬袋。
巴西是世界最大的咖啡出口國,在近40年,巴西咖啡豆和速溶咖啡貿易量年均爲13.8億美元。2002年,世界咖啡貿易總量爲8870萬袋,巴西出口2799萬袋,比2001年增長19.3%,佔世界咖啡貿易量的30%,位居第一(第二是越南,貿易量1220萬袋,佔13.7%),比1998年的22.3%增加了近8個百分點。歐洲是巴西咖啡的最大買主,購買量佔巴西出口量的50%,2002年,向歐共體國家出口咖啡達到7.087億美元,佔52.3%,其它大部分銷往美國和亞洲。咖啡出口中,咖啡豆佔85%。
巴西咖啡產地主要分佈在米納斯、聖艾斯皮裏託、聖保羅、巴拉那、朗多尼亞、巴伊亞等州,目前,巴西咖啡植株數達到60億株,約300萬公頃。米納斯是巴西咖啡主產區,2002年產量爲2271萬袋,佔全國產量的48%,聖艾斯皮裏託州是巴西大粒咖啡的主產區,位居全國第一。
巴西咖啡主要品種分爲三類,即大粒咖啡(robusto)、小粒咖啡(arabico)和脫殼櫻桃咖啡(cereja descascada)。巴西咖啡佔世界同類咖啡的比重由1996年的19%上升到25%。由於受市場價格影響,巴西正調整咖啡品種結構,將小粒咖啡面積減少,大粒咖啡面積擴大,而櫻桃咖啡將是發展的重點,咖啡佈局有向東北延伸的趨勢。
中深烘焙以上的巴西咖啡豆風味特徵有着平衡的醇厚味道,堅果、可可般風味調性,以及焦糖般的餘韻。

二、哥倫比亞 (南美)
2002年哥倫比亞咖啡種種植面積77.5萬公頃,生產面積61.3萬公頃。
哥倫比亞咖啡均爲阿拉比克軟咖啡。哥倫比亞是世界是最重要的咖啡出口國之一。據國際咖啡組織統計,1991-1996年間哥咖啡出口量佔世界總出口量的比例平均爲17%,僅次於巴西(佔世界總出口量24%)。2001年全球咖啡總出口量爲8970萬袋,其中巴西佔26.2%,越南佔15.8%,哥倫比亞佔11.1%。
哥咖啡主要出口目的國有:美國、德國、日本、比利時、法國、加拿大、荷蘭、瑞典、西班牙等。美國是哥咖啡最大出口市場。
中烘焙以上的哥倫比亞咖啡豆風味特徵有着平衡的醇厚味道,柔和的果酸、堅果的香氣以及焦糖般的餘韻。
前街咖啡選擇了哥倫比亞蕙蘭這支豆子進行觀察衝煮。哥倫比亞咖啡豆色澤澄亮透明,豆種大小相等,形狀完整,有如翡翠圓融通透的美感。

風味描述
整體比較均衡,甜感明顯,入口有黑巧克力、堅果、焦糖,在溫度變化下有柔和的果酸感。
三、越南(東南亞)
法國傳教士於1860年初,將咖啡樹引進越南開始種植,但直到1990年,越南的咖啡產量逐漸在世界市場上佔有一席之地。2001年全球咖啡總出口量爲8970萬袋,其中巴西佔26.2%,越南佔15.8%,哥倫比亞佔11.1%。這是越南首次超過哥倫比亞居世界第二位。但越南的咖啡豆主要是廉價的粗壯咖啡豆,出產的品種主要是羅百氏特咖啡豆。越南出口量的大幅增加促成了國際市場咖啡價格的下跌。
四、印尼 (東南亞)
主要產地有爪哇島、蘇拉威西島及蘇門答臘島,其中90%爲羅布斯塔種,印尼的羣島是世界第一大的Robusta豆生產地區。其中爪哇(Java)、蘇門答臘曼特寧(Sumatra)最爲有名。
深度烘焙的印尼曼特寧咖啡豆,具有草本香料的香氣,可可般的圓潤,醇厚度高回甘明顯。
前街咖啡對店內四款印尼曼特寧(黃金曼特寧、老虎曼特寧、林東曼特寧、陳年曼特寧)的生豆進行觀察,發現曼特寧的豆子還是有比較多的羊蹄豆的,這是因爲在豆子含水率較高、豆質較軟時便對其進行脫殼而導致的。
黃金曼特寧的目數是19+的,所以個頭上比其他的曼特寧豆子明顯大了不少,由於含水率較高,所以生豆會偏深綠色;
老虎曼特寧生豆豆身圓潤,微黃帶綠,均勻度較佳;
林東曼特寧的生豆呈灰綠色,生豆有大有小,相對來說並沒有太均勻;
陳年曼特寧由於處理法的原因,生豆顏色較爲特殊,是橙色偏黑的,表面看起來是皺皺巴巴的,生豆大小也比較均勻。

層次多變,醇厚乾淨,平衡感高,有強烈的堅果、巧克力風味,濃郁香料和焦糖香氣,帶有水果氣息,尾韻持久。
五、墨西哥 (中美)
18世紀末,墨西哥便開始種植咖啡,咖啡生產地集中在較靠近危地馬拉的南部地方,東西側都有山脈貫穿,使它的山嶽傾斜地,成爲咖啡理想栽培地形。直到 1870年,纔有相當大的量外銷。墨西哥咖啡豆的最大輸出國家是美國。

中度以上烘焙的墨西哥咖啡豆,具有可可堅果的香氣,蜂蜜杏仁般的中觀以及蔗糖般的餘韻。
六、危地馬拉 (中美)
世界上沒有幾個地方能提供,像危地馬拉所生產的各種優質咖啡豆。危地馬拉咖啡豆之所以品質優異,乃因其產地俱備之特有條件;包括每個地區各有不同的氣候變化,火山形成的富饒土壤,充沛的天然水資源,高海拔的山嶺及蔭涼潮溼的森林等。
危地馬拉有七個主要咖啡產區:Antigua,Coban,Atitlan,Huehuetenango,Fraijanes,Oriente,及San Marcos.
每個產區的咖啡豆皆有其特色,也爲危地馬拉在國際上贏得不少讚譽,尤其Antigua它那酸、甜、醇的質感是多麼完美協調;再加一絲絲煙燻味、更強調它的神祕感、在品嚐後您將有理由不再讓自己到處尋找替代品。
危地馬拉咖啡豆大都耕種在高海拔的火山區土壤屬最高級的Arabica品種。由於成熟期間較長,造成豆子顆粒屬中等而密實型(危地馬拉咖啡豆等級評定,不是以顆粒大小,而是以缺點多寡做爲分級標準),豆子色澤爲深青綠色。香、醇、甘甜及清新愉悅的獨特酸味是其特色,乃因咖啡豆的香味及口感皆隱藏在它的酸味之故。因此,具有此特色的咖啡豆,纔可稱爲上等咖啡豆。
中度以上烘焙的危地馬拉咖啡豆,具有柔和的果酸,堅果以及微煙燻的香氣以及可可焦糖般的餘韻。

七、薩爾瓦多 (中美)
薩爾瓦多在地理位置上,緊臨洪都拉斯、危地馬拉與北太平洋,天然環境優美,擁有令人歎爲觀止的火山羣。 薩國的地勢屬於高地地形,平均海拔高度650公尺,國土分佈在兩座平行的高山之間(一座與太平洋海岸平行,另一座位於洪都拉斯交界),獨特的地理環境,在薩國內劃出五種不同的自然生態圈,無論土壤、氣候緯度、廣大的天然遮蔭等條件,顯示薩爾瓦多是非常適合栽種優質阿拉比卡咖啡的國家;事實上,早自十九世紀以來,咖啡一直是這個國家最重要的經濟產物之一。
優秀的薩爾瓦多咖啡風味明亮但不具侵略性,中淺烘焙程度下口感清爽,風味勻稱,偶爾具有梅子與香料般的氣息,一般而言,口感比鄰近的哥斯達黎加咖啡更厚重一些。深度烘焙的薩爾瓦多咖啡時常展現迷人的濃郁巧克力風味。值得一提的是,薩爾瓦多咖啡絕大多數都是有機咖啡。薩國雖然仍生產大量低海拔低價位的咖啡豆,但逐薩爾瓦多的莊園級精品咖啡也越來越多。
中度以上烘焙的薩爾瓦多咖啡豆,具有平衡的口感,堅果奶油般順滑以及柑橘般果酸。

風味描述
聞起來有果香堅果香氣,入口有堅果、奶油、焦糖,餘韻有莓果、柑橘酸調,整體口感比較均衡。
處理法 (50%水洗、50%蜜處理)
Finca Guayabo 主要是以不同後製方式處理法來呈現這支咖啡豆,以100%的Bourbon 品種,用不同的處理方式,以50%的蜜處理,50%的水洗方式,使原生Bourbon 品種透過不同處理法呈現不同風味,呈現出多層次牛奶般滑順並加入可可巧克力調的”巧克力情人”。
蜜處理的作法是將咖啡豆運到海拔約1800 公尺的蜜處理處理場,到海拔較低的地方處理是因爲此處不易起雲霧,日照充足且紫外線強,可以讓咖啡豆吸收足夠的熱能使咖啡呈現非常好的香氣,可以讓咖啡在很短的時間內,讓咖啡曬乾,且風味能更好的呈現。
水洗法則是運用此區域豐富的水資源,讓 咖啡呈現很乾淨的口感。用50%的蜜處理搭配50%的水洗混合在一 起,做成一支single orrigin 很有特色的咖啡, 是這個農莊想要表達的風味,讓咖啡充滿 了 巧克力、可可、核果的調性,並將它命名爲「巧克力情人」系列。
八、洪都拉斯 (中美)
也是按海拔的高低對咖啡豆進行分類,高山地帶的水洗咖啡豆較好,而低地的咖啡豆則略遜一籌。知名的產地有聖塔爾巴拉、格拉西阿斯、東方的科馬亞格亞、鄰近尼加拉瓜的喬爾提卡。
中度以上烘焙的洪都拉斯咖啡豆,具有細膩的酸度,整體表現平衡,回味悠長。

雪莉衝煮風味:聞起來有香草、奶油的香氣,入口有威士忌、莓果、杏仁、黑巧克力風味,餘韻有楓糖的回甘。
荔枝蘭衝煮風味:入口荔枝、白蘭地,奶油,隨着溫度的變化下,酒味和黑巧克力明顯,口感厚實,餘韻蜂蜜甜感明顯。

九、哥斯達黎加 (中美)
哥斯達黎加位於中美洲低緯度的火山帶上,中央高原及山區海拔約800~2000公尺,適合咖啡生長。哥國咖啡向來以風味極均衡、極乾淨、極清亮、帶漿果風味的水果酸著名。極優秀的哥斯達黎加咖啡餘味會出現香料味以及可可風味。該國最著名的大栽植區是靠近首都聖荷西的塔拉珠(Tarrazu)。塔拉珠產區平均緯度最高、氣候、土壤條件極佳,造就塔拉珠成爲哥國最著名、也是一般公認最優秀的咖啡大產區,三水河(Tres Rios)是塔拉珠產區內著名的小產區。精品咖啡世界中最著名的哥斯達黎加單一莊園咖啡是年產量僅十六萬磅的塔拉珠區拉米妮塔(La Minita)莊園。
中度以上的哥斯達黎加咖啡豆,風味具有柔和的柑橘酸、堅果可可的香氣以及焦糖般的餘韻。

用V60濾杯衝煮的時候,聞起來有明顯的發酵香氣和成熟草莓香,喝起來比較順滑醇厚,果汁感較強,有草莓、堅果、奶油、紅酒、葡萄乾的,餘韻帶有酒香。
十、古巴 (西印度羣島)
古巴以雪茄和咖啡而聞名。咖啡是十八世紀中葉法國人從海地引進。古巴咖啡等級的分類是依咖啡豆的大小而分成ETL(特級)、TL(中級)、AL(普通)三種。
古巴.克里斯德爾山
適合烘培度:中度
味道特徵:味道穩定。酸、苦、甜均衡
簡介:咖啡豆屬於中~大粒。尤其「克里斯德爾山」是古巴最引以爲傲的良質大形高級咖啡豆。
十一、牙買加
牙買加最出名的藍山咖啡,是種植在牙買加藍山山脈910-1700m海拔地區的鐵皮卡咖啡豆,這也是阿拉比卡咖啡品種中最古老的品種之一,乾淨清幽的香氣與味道是鐵皮卡咖啡豆的特點。910m以下海拔種植只能被稱爲牙買加高山咖啡/牙買加特選咖啡。
正宗的藍山咖啡是一定是使用的木桶裝載出口,規格爲15/30/70kg。同時牙買加政府或者咖啡原產地會頒發認證證書,大家購買的時候可以留意。前街咖啡實體門店中可以看到木桶以及原產地認證證書。
中度烘焙以上的牙買加藍山咖啡豆,具有酸甜苦平衡的醇厚風味,柔和的果酸,可可的香氣醇厚以及焦糖般的餘韻回甘。

藍山一號咖啡風味:入口黑巧克力、堅果的風味,乾淨度高,很好的醇厚度,甘苦平衡,餘韻則有黑糖的甜感。
十二、肯尼亞 (非洲)
位於東非赤道下的肯亞,所栽種的咖啡豆是高品質的阿拉比卡種。由波旁島引進而來的摩卡系小粒咖啡豆,具獨特風味,適合用來做混合,且頗獲好評。
淺度-中度烘焙的肯尼亞咖啡,擁有擁有着飽滿的咖啡酸質,如小番茄般的香氣,同時有着李子類水果的酸質以及黃糖般的甜感。
十三、坦桑尼亞 (非洲)
坦桑尼亞鄰近肯尼亞等咖啡著名生產國,咖啡出口佔國家經濟很重要比例。坦桑尼亞咖啡通常擁有芳香、略帶水果酸味、濃郁爽口的特質,着名產區爲西北方克里曼加羅(Kilimanjaro)山一帶。坦桑尼亞所產的咖啡,阿拉比卡佔75﹪,羅布斯塔佔25﹪。
坦桑尼亞小豆果(亦稱圓豆、Peaberry)產量甚多,收成後通常以震動式自動機器篩選出外表圓形的小豆果,並且以較高售價賣至國際精品咖啡市場,廣受北美與歐洲買家歡迎。豆果因爲外型以及內部密度緣故,烘焙時升溫較平豆迅速,因此烘焙時火候掌握工夫相對較重要,適合淺度乃至中度烘焙。

較輕烘焙程度(City)之下芳香爽口,風味近似肯亞、明亮突出,帶有甜味,適合單品享用直接品嚐其本身天然芳香。較深度烘焙(Full City)之下酸性遞減至極弱,甜味則非常突出,是用以調配義式濃縮咖啡配方的好選擇。坦桑尼亞咖啡擁有較一般咖啡豆更突出的香味,獨特細緻的豐富口感,核果及巧克力香中融合着濃郁水果香氣,變化無窮,值得品嚐。

十四、埃塞俄比亞 (非洲)
埃塞俄比亞是擁有堪稱咖啡原產地的歷史和傳統的農產國。被視爲「咖啡」這個名稱由來的所在是西南部的卡法,南部的希摩地方則是主要產地。
埃塞俄比亞
埃塞俄比亞著名咖啡產區——耶加雪菲(Yirgacheffe)位於埃塞俄比亞的南部的,願意爲天然的溼地,。該產區原本隸屬埃塞俄比亞另一個著名的咖啡產區——西達摩(Sidama)產區,屬於西達摩咖啡產區裏的一個小鎮。但是由於耶加雪菲小鎮每一年出產的咖啡有有獨特的花香與柑橘類水果的酸香,於是在2010倍埃塞俄比亞商品交易所將耶加雪菲產區與西達摩產區分離,並形成了如今讓大家喜愛的耶加雪菲產區。

果丁丁咖啡風味:入口有柑橘、紅茶,隨着溫度的變化下有奶油、焦糖、杏仁餘韻回甘明顯,口感乾淨清甜。
十五、也門 (亞洲)
也門爲阿拉比卡種的發祥地。也門的摩卡咖啡曾經風糜一時,也門在1500~2500米的地段種植物啡。也門咖啡的種植高度決定了也門咖啡的優良品質。

十六、夏威夷 (美洲)
此爲夏威夷咖啡的代表品, 屬阿拉比卡種。 由於氣候的影響,讓可那咖啡豆包含着濃郁的花香以及一種類似核果及肉桂的特殊風味,是別的咖啡所沒有的,是世界上最好的咖啡之一,年生產量達二百萬磅,美國本土的咖啡都來自於夏威夷。
夏威夷科納咖啡
夏威夷是美國的附屬羣島,位於太平洋中部。衆多島嶼中,只有大島栽植咖啡,不僅是因爲大島的海拔較之其他島嶼最高,還有氣候上最爲適宜,且無過多的雜交品種,確保了栽植環境的純淨。雖說大島的海拔較之其他島嶼最高,但咖啡栽植區域的海拔也只有300—1100米。
夏威夷屬於海島型咖啡產區,咖啡種植地帶位於汪洋大海中,沒有與陸地鏈接。這裏全年的氣溫變化不大,但日夜溫差大,而且有足夠的雲霧來遮擋太陽。雖然咖啡產區的平均海拔都不是很高,但由於夏威夷特殊的海島型氣候以及肥沃的火山土壤使得這裏出產的咖啡品質不低。海島型咖啡的地域之味,被界定爲柔香淡雅。厚實度稍薄,不如印尼曼特寧醇厚,也欠肯尼亞多變的酸質。
