	　　在咖啡行業中，你經常會聽到單品咖啡這個詞。那麼，何爲單品咖啡呢？單品咖啡，就是用原產地出產的單一咖啡豆磨製而成，飲用時一般不加奶或糖的純正咖啡。有強烈的特性，口感特別，或清新柔和，或香醇順滑;成本較高，因此價格也比較貴。近來，喜歡單品咖啡的人羣日漸增多，那麼，這部分羣體具備怎樣的特質呢？我們一起來聽聽行業人士的見解吧！</div>

	　　老薛自己本身也是在一家主要出單品的咖啡店工作，努力推廣單品咖啡也蠻久了。店裏現在也主要以單品咖啡爲主要盈利點，在店裏也會觀察瞭解顧客，和很多愛好咖啡的顧客聊天，因爲這樣接觸的顧客大多數都是真正喜愛咖啡的人。對於喜歡單品咖啡的原因，初步判斷大概是：1.被咖啡本身的各種風味吸引2.是一種生活方式，或是對咖啡文化的認可3.與咖啡館的關聯。</div>

	　　以個人感受，店裏喝單品的顧客有幾種類型：</div>

	　　1. 對單品咖啡風味很喜歡，喜歡喝不同品種的咖啡，喜歡喝不同咖啡館的咖啡，嘗試新的咖啡豆，嘗試不同烘焙師的風格。願意嘗試烘焙師新的烘焙風格。這種顧客可以感覺到他們真的喜愛喝咖啡，會在家裏自己衝咖啡，研究咖啡的味道，買不同地方的咖啡豆，有自己的工作，咖啡也就成了他們業餘最大的愛好，他們有把咖啡當作終身職業的傾向;這種顧客很容易以後自己開咖啡館，他們對於咖啡真的是熱愛，由衷地熱愛，去到不同的城市，首先也會去了解那個城市有什麼自家烘焙的咖啡館，第一時間去嘗試他們的風格，和館主聊天，就是很enjoy這種感覺。</div>

	　　PS:因爲這種現象，我們店也成爲了一些外地咖啡愛好者來到廣州一定會來喝咖啡的店</div>

	　　2. 沒什麼事就會選擇泡咖啡館打發時間的顧客，他們能接受單品咖啡，但不會很熱衷，泡館久了對於單品咖啡的品質也越來越挑，但基本上是隨着我們店的水平成正比的;他們比較在意有個地方可以打發時間，不太喜歡去熱鬧的地方玩，所以咖啡館變成了主要的去處，他們一般都很和善，很好玩;我們店裏就有好幾個顧客，從三年前開業到現在，一年365天，他們來我們店的天數接近300天，這些顧客真會給店裏增色不少。</div>

	　　3. 同行。這類就是同行之間偶爾去彼此交流一下，當然也有踩場的，不過現在很少了，大家都比較謙遜！</div>

	　　4. 散客，對咖啡接觸不多，路過看到是咖啡館就進來，然後發現菜單裏只有單品咖啡，不得不點，這類顧客有些我們會和他聊天，有些接受了咖啡，然後發展成常客，慢慢地習慣咖啡;有些還是不能習慣咖啡，這種顧客比較難影響他們，但我們也會盡量讓他嘗試不同的咖啡，希望通過對比讓他們可以選擇到適合他們口味的咖啡。</div>

	　　5. 來找個地方聊天和聊工作的。這一類對咖啡沒多大要求，因爲店裏主要是單品，所以他們就點杯單品，一邊聊天一邊喝;也有顧客固定過來談事情，聊天，因爲習慣我們咖啡的味道，隔一段時間就會過來喝單品。</div>

	　　大概總結了5種這樣的顧客，都是來了店裏會喝單品的，而且他們是主要消費人羣。經常有人問老薛，他們真的有那麼喜歡嗎？老薛講到，他們真的是喜歡咖啡，喝真正咖啡的味道，而且也不是什麼高大上，它就是這一類人生活中的一部分;你如果有機會喝不同的咖啡，或者去不同的自家烘焙咖啡館嘗他們的咖啡，和他們聊天，大概你就會慢慢理解爲何一個人會那麼喜愛咖啡！</div>
