蜜處理法的誕生最早是爲了改良有數百年曆史的發酵式水洗處理法;水洗法有兩種,一種是非常耗水的傳統水洗法,另一種則是先以機械的方式,刮除黏附在咖啡種子表面的果膠層,刮除完的帶殼豆就會跟經過發酵水洗處理的豆子一樣乾淨。後續會再進行曝曬,乾燥後後的豆子會呈現偏白的淡黃色,和傳統水洗豆的外觀並無太大的差異,因此也被稱爲“機械式水洗豆”。</div>

但若在刮除果膠層的步驟,做些微的調整,譬如保留部分或完整的果膠層,再去進行乾燥處理,就變成了所謂的蜜處理法。這些含有豐富養分的果膠層,會透過曝曬的褐化與發酵滲入豆子裏,使得後續風味能多帶一股甜感。 經過多年的試驗,農民發現越多的褐化作用有助於提高甜感,而越多的果膠量,將會有越多的褐化潛力,因而衍生出白、黃、紅、黑等四種蜜處理程度的區分。</div>

其實並不盡然,而<a href="https://www.gafei.com/kafeidouchulifa/20190131129500.html">金黃蜜處理</a>就是一個最佳的例子。<a href="https://www.gafei.com/kafeidouchulifa/20190131129500.html">金黃蜜處理</a>的“金黃”,指的是帶殼豆在陽光曝曬下的金黃色澤,也就是未褐化也未發酵的乾燥果膠的顏色。</div>
