與東方的“斗酒詩百篇”相對應，咖啡在西方文學中也被賦予了傳奇的“魔藥”身份。如今成爲“文學咖啡”代名詞的是Espresso及其衍生產品，與Espresso的誕生密切相關的是意大利東端城市的裏雅斯特(Trieste)。此地咖啡館的名人錄雖然不及羅馬與巴黎來得耀眼，但也有自己的傲人之處，領軍人物之一就是詹姆斯·喬伊斯。的裏雅斯特的旅遊手冊上自豪地介紹：喬伊斯在這裏完成了《都柏林人》、《一個青年藝術家的畫像》，鉅著《尤利西斯》的最初構思也始自這裏。</p>

*的裏雅斯特*</p>
<p>
關於喬伊斯在咖啡口味上的偏好，首先需要澄清的是：儘管喬伊斯來自愛爾蘭，但他幾乎沒有可能喝過所謂的“愛爾蘭咖啡”。愛爾蘭咖啡是一種熱咖啡、愛爾蘭威士忌與糖的調和物，最後頂上還要加一層厚厚的奶沫。關於這種咖啡的起源，有不少含混的傳說，其中最浪漫的版本是：愛爾蘭Shannon機場的一個 咖啡師 專門爲他暗戀的一個空姐調配的。更接近現實的版本是：在某個嚴冬的夜晚，爲安撫誤機的旅客，機場吧檯的 咖啡師 發明了這種有些刺激的“咖啡雞尾酒”。無論依照哪個版本，愛爾蘭咖啡都誕生在20世紀40年代後期，而喬伊斯1941年已在蘇黎世病逝，何況他自1912年起終生不曾返回愛爾蘭。</p>
<p>
喬伊斯最早來到的裏雅斯特的時間是1904年，此後他在這座城市先後居住了十幾年。對照咖啡烹煮技術的發展史，也許可以想象到喬伊斯在咖啡館中會面對怎樣的選擇。1901年，第一臺應用蒸汽作爲壓力來源的商用 咖啡機 在意大利誕生。隨着各種相關技術的發展，各種加壓型 咖啡機 在20世紀20年代的意大利風靡一時，其中真正與的裏雅斯特休慼相關的則是1935年弗朗西斯科·意利發明的那臺“Illetta”。當時註冊的專利將之稱爲第一臺利用壓縮空氣加壓的咖啡機。正是以這臺咖啡機爲基礎，弗朗西斯科·意利在的裏雅斯特建立了以他的名字“Illy”命名的咖啡王國。</p>
<p>
如今的裏雅斯特屬意大利，但這並不意味着當年喬伊斯居住時品嚐到的就是萌芽時期的Espresso。畢竟，這裏是的裏雅斯特。</p>
<p>
“的裏雅斯特”還有一個更具詩意的譯名“翠絲堤”，但似乎一直難於推廣。這座城市堪稱伊斯特拉半島幾個世紀紛爭史的微縮舞臺，作爲一個港口城市，它還要額外負擔另外一些歷史事件的起承轉合：1914年7月2日，的裏雅斯特港口至火車站的道路上迎來一支護送靈柩的隊伍，棺槨裏躺着的是剛在薩拉熱窩被刺殺的奧匈帝國王儲夫婦。“的裏雅斯特”這個名字雖然拗口，卻已經成爲多數中文歷史書本中的強迫記憶</p>
<p>
喬伊斯發自的裏雅斯特的家信中，落款裏這座城市的歸屬還是“奧地利”。與在的裏雅斯特發生的很多事情一樣，咖啡也在此發生了十字路口般的混雜交匯。儘管其間有諸多風風雨雨，奧地利的哈布斯堡王朝算是近代管轄此地時間最長的一個。城中最輝煌的建築都源自奧匈帝國時期。匈牙利式的咖啡館以內飾華麗富貴著稱，的裏雅斯特城中至今尚存的幾家老字號咖啡館延續了這一風範。傳統的土耳其咖啡要添加丁香、豆蔻、肉桂等香料一起烹煮，而且不過濾渣滓，煮好的咖啡頂部會覆蓋一層泡沫，而這種泡沫事實上與Espresso咖啡表面的Crema有異曲同工之妙。傳說中奧地利人從土耳其軍隊手中揀到了 咖啡豆 。爲順和歐洲口味，1684年在維也納開張的第一家咖啡館就對此進行了改良，往黑咖啡裏注入牛奶，隨後衍生出各種加奶程度不同的變種，最華麗的版本之一是後來“奶油-咖啡-糖漿”三段論式的維也納咖啡(Viennese)。維也納咖啡自然隨着奧匈帝國來到了的裏雅斯特。</p>
<p>
意大利作家馬格利斯(Claudio Magris)1939年出生在的裏雅斯特，他在那本著名的《微觀世界》(Microcosmi)中感慨：“帝國雖然不存在了，但這個城市卻還是老樣子，就像聖馬可咖啡館(SanMarco)那樣。”然而，“帝國”究竟指的是哪一個?在同一本書裏，馬格利斯又強調：聖馬可咖啡館的標誌是威尼斯飛獅——當年威尼斯公國的象徵。1720年，威尼斯開張了意大利第一家咖啡館。這個港口城市對於源自也門的那種“摩卡咖啡”(Mocha)的做法並不陌生：大量奶油稀釋，輔以肉桂、可可粉。意大利也因此對“重奶重糖”口味的咖啡有着歷史悠久的親和力。直至今日，意大利咖啡師仍擅長把玩各種咖啡與奶的比例和文字遊戲：“Caffemacchiato”是在咖啡中加一點點熱牛奶;“LatteMacchiato”則是在牛奶中加少許咖啡。對於這一傳統，的裏雅斯特的咖啡館當然也不會忽略。</p>
<p>
喬伊斯剛到巴黎三天，就發生了後世久有傳聞的那段咖啡館佳話：喬伊斯與莎士比亞書店的老闆畢奇在巴黎的“雙偶”咖啡館會面，確定了《尤利西斯》的出版事宜</p>
