拿鐵、瑪奇朵、卡布奇諾，這些意式咖啡幾乎是所有人對於咖啡最初的認知。我們對於星巴克意式咖啡的優劣不做評論，但是它確實啓蒙了很多人對於咖啡的熱愛。我也在很久以前用零花錢使勁攢星星，到後來，才漸漸發現撇去了奶泡與牛奶的咖啡纔是真愛。
關於咖啡，我之前在知味發佈的文章《從一顆豆子到一杯咖啡，你需要的咖啡知識都在這裏》中介紹了許多關於咖啡的入門乾貨，這一期，我們就再深入一些，聊聊咖啡的品種。

要說如今咖啡館裏最歡迎的飲品，各種各樣的花式咖啡絕對還是主力。以意式濃縮爲底，加奶、加奶泡、加水、甚至加酒、加果汁、加巧克力，各種組合搭配，只要好喝，就是一款不錯的花式咖啡了。
這些飲料好喝，甚至可以說推進了咖啡的普及。然而，就像有的葡萄酒愛好者喜歡細膩優雅的勃艮第黑皮諾，有的巧克力饕客喜歡果香清冽的馬達加斯加Criollo，咖啡也可由不同品種，在不同氣候、土壤條件下可以組合出無限的滋味。
這種擁有風土特色的精妙之物，每個品種、每個國家、甚至每個產地的風味都不盡相同。雖然因爲諸多限制，對於一些咖啡豆的真正產地很難做到追根溯源，但是這並不妨礙饕客們追求咖啡最最純粹本真滋味。於是，單一品種單一產地的單品咖啡便應運而生了。

咖啡作爲標誌性的熱帶作物，雖然品種繁多，但追根結底，主流的原生的樹種其實只三種。阿拉比卡、羅布斯塔與利比里亞。
其中的利比里亞，是西非的原生樹種，雖然生長的適應能力很強，但是種植面積卻十分有限，在日常的咖啡館裏很難見到。因此，我們着重聊聊阿拉比卡與羅布斯塔。
羅布斯塔，口味相對粗糙，通常帶有明顯的苦味、酸度很低、口感醇厚，咖啡因含量很高。這個品種對生長環境的要求不高，體格粗獷、不易生病，加上口味一般，已經漸漸淪爲了速溶與廉價咖啡的代名詞。在全世界，羅布斯塔的產量大致佔30%-40%。
阿拉比卡，是原生於埃塞俄比亞的優質咖啡品種，一般種植於海拔較高、氣候相對涼爽的地區（一般來講，優質的咖啡大都產自山地與高原地區）。這是品質最佳的原生咖啡品種，有着複雜的香氣與較高的酸度。以其製作的咖啡通常酸、甜、苦味均衡，而且會因爲不同地域的風土條件產生無限多變的複雜香氣，比如水果、焦糖、巧克力等等等等。阿拉比卡大致佔全球咖啡總產量的65%左右，優質的咖啡館幾乎都採用阿拉比卡的咖啡豆。
三大原生的咖啡樹種也同樣衍生出許許多多口味各異的變種，比如甜味獨特的波旁、風味突出的帝比卡、水果風味的SL28與SL34、以及如日中天、花香四溢的瑰夏等等（這些變種大都屬於阿拉比卡家族）。這些咖啡品種的鮮明特徵，處理方式帶來的風味影響以及產地特徵結合起來，就形成了咖啡豆獨特的風土。

作爲廣泛種植的經濟作物，咖啡對於生長環境的需求主要在這幾個方面：
氣候：迴歸線以內，氣候相對涼爽，冬季無霜。通常，不同品種的咖啡對於光照的需求略有不同，有時適當的樹蔭遮蔽甚至可以提升咖啡口味的複雜度；
降雨：降雨量適中，年降水量1500~2259mm；
土壤：排水性能良好，火山灰質地的土壤最爲適宜；
海拔：大部分的海拔均分佈在200~2000m的地區。一般來講，海拔越高越好，優質的咖啡大都產自高原或山地，一些中美洲產區甚至以海拔高度來評定咖啡的等級。
咖啡在非洲、亞洲、美洲、以及大洋洲一些熱帶島嶼均有種植，雖然種植地域十分廣泛，但是各地的咖啡都有自己的獨特風味。
非洲是公認的咖啡咖啡發源地，雖然整個非洲大陸都有咖啡生產，但是得益於東非較高的海拔，和常見的火山性質的土壤，非洲的優質咖啡通常來自埃塞俄比亞、肯尼亞、坦桑尼亞等國。
埃塞俄比亞：位於非洲東北部，作爲公認的咖啡發源地，咖啡的品質非常出衆。這裏咖啡通常是埃塞俄比亞的原生品種Heirloom，口感十分多樣，花香、果香應有盡有，水洗豆通常細膩優雅，日曬豆則奔放而迷人。Sidamo、Harrar與Yirgacheffe（耶加雪菲）是埃塞俄比亞最爲著名的三大產區，其中的Yirgacheffe，可以說是全世界最優質的咖啡產區之一。Yirgacheffe的水洗豆有着極其濃郁的香氣、飽含柑橘、花香的氣息，口感細膩優雅；日曬豆則有着奔放的果香，口感獨特而美味。
埃塞俄比亞，Heirloom
肯尼亞：緊鄰埃塞俄比亞，這裏的咖啡以鮮明而複雜的莓果香氣而著稱，口味甜美、酸度也恰到好處。肯尼亞品質最佳的咖啡來自中部的Nyeri與Kirinyaga，得益於死火山肯尼亞山附近的火山土壤，這裏的咖啡果香十足，品質極高。常見的咖啡品種SL28與SL34，有着顯著的水果風味，它們便是來自肯尼亞斯科特實驗室的選育品種。
肯尼亞的咖啡農場
坦桑尼亞：位於肯尼亞南部，得益於乞力馬扎羅山，這裏的咖啡口感複雜，飽含水果風味，酸度清新活躍，風味與肯尼亞咖啡類似。
盧旺達：位於非洲東部的大湖地區，盧旺達咖啡通常帶着清新的紅色水果香氣，此外莓果與花香也十分常見。
布隆迪：與盧旺達緊鄰，這裏的優質咖啡通常會有濃郁的水果風味，口感醇厚，甚至讓人聯想到果汁。
有巴拿馬瑰夏與牙買加藍山坐鎮，中美洲咖啡品質當然不容小覷。此外，洪都拉斯、危地馬拉、薩爾瓦多、甚至夏威夷都是值得嘗試的產地。
牙買加：提起牙買加的咖啡，很多人第一個想到的便是藍山，長期以來都位於“最昂貴的咖啡”之列。藍山咖啡純淨細膩、甜美多汁，然而，並不是所有產自藍山咖啡都可以使用這個珍貴的名號，只有種植在藍山海拔900-1500米之間的咖啡纔有資格使用”Jamaica Blue Mountain“的名稱。由於日本幾乎得到了藍山絕大部分的咖啡原豆產量，因此市面上的藍山價格偏高，不少品牌都推出了“傍大款”的“藍山風味咖啡”。
藍山
巴拿馬：作爲咖啡出產國，巴拿馬擁有一些最爲理想的風土特色：高海拔的種植園、肥沃的火山土、涼爽的氣候以及非凡的物種多樣性，幾乎所有的阿拉比卡咖啡豆種在巴拿馬都有種植。當然，說起頂級咖啡，絕對繞不開當地的翡翠莊園。得益於獨特的風土條件，涼爽的氣候與頻繁的霧氣讓這裏的瑰夏有着爆炸地花香與柑橘香氣，風味複雜，口感恬淡細膩。品質這麼好，價格自然也不便宜，甚至有人戲稱其爲咖啡中的“拉菲”。
危地馬拉：來自這裏的咖啡風味特徵十分豐富，從優雅恬淡的花香果香，到口味濃郁的巧克力氣息都有。Antigua是危地馬拉最爲出名的產地，也是全球幾個知名度最高的產地之一。
薩爾瓦多：得益於優沃的火山土壤，薩爾瓦多同樣是中美洲優質的咖啡生產國之一。來自這裏的咖啡以甜美的口味與均衡的口感著稱，酸度柔順令人愉悅。

夏威夷：夏威夷火山灰質地的土壤是種植優質咖啡的有利條件，然而，受制於海拔的限制，這裏的咖啡雖然清爽易飲，但是缺乏複雜度。KONA是夏威夷赫赫有名的產區。
洪都拉斯：這裏是中美洲咖啡產量最大的國家。來自洪都拉斯的優質咖啡，通常有着濃郁複雜的水果香氣，酸度也清冽爽口。
哥斯達黎加：境內的幾個產區風味各異，通常口味純淨甜美，口感淡雅。
尼加拉瓜：這裏的咖啡口感十分多樣，通常果香豐富、酸度純淨。
古巴、多米尼加：這裏的咖啡有着島嶼咖啡典型的口感，溫和純淨，酸度較低。
南美洲已然是咖啡產量最大的大洲，僅巴西一國就包攬了世界近半的咖啡產量。除了這些大規模生產的咖啡莊園，一些來自哥倫比亞、厄瓜多爾等高海拔地區的小農戶咖啡也開始備受關注。
巴西：一直以來，巴西都是全世界最大的咖啡生產國，幾乎包攬了世界近半的咖啡產量。通常，來自巴西的優質咖啡口感醇厚甜美，酸度較低，有着類似巧克力、堅果、焦糖的香氣。巴西本國的咖啡產地一般聚集在南部地區，雖然這裏地處高原，但是海拔通常不過1000m，由於氣候原因，當地很難找到頂尖品質的咖啡。
巴西，黃波旁
哥倫比亞：得益於安第斯山麓羣山環繞的高海拔，使得哥倫比亞的咖啡風味豐富，品質出衆，有的有着濃郁的巧克力、堅果香氣；有的則有着果醬般的甜美口感。來自Cauca（考卡）、Antioquia（安蒂奧基亞）、以及Risaralda（裏薩卡爾達省）的咖啡通常都有着不錯的品質。
厄瓜多爾：來自這裏的優質咖啡通常口感甜美、酸度清爽。一些高海拔產區的咖啡品質極高，比如來自Loja（洛哈）的咖啡豆便有着頗具複雜度的迷人風味。
委內瑞拉：這裏的咖啡通常口感甜美，酸度較低。
亞洲在咖啡世界的地位同樣舉足輕重，印度尼西亞、巴布亞新幾內亞、也門、甚至雲南都有生產品質上乘、風格獨特的優質咖啡。
印度尼西亞：印尼應該是亞洲最爲著名的產地了，常常聽到的“曼特寧”便產自這裏。然而，“曼特寧”這個名詞即不是咖啡產地，也不是咖啡品種，其實是蘇門答臘島上一個種植咖啡的族羣Mandheling。蘇門答臘的曼特寧咖啡有着獨有的草本、木質香氣，但是通常酸度較低（主要是因爲本地的半水洗處理方式）。除了蘇門答臘島，印度尼西亞的爪哇、蘇拉威西島都是品質不錯的產地。
印尼的帝比卡變種咖啡
在印度尼西亞，還有一種以“貴”聞名的咖啡——麝香貓咖啡，也叫貓屎咖啡。由麝香貓喫過咖啡果實後排出的糞便中的咖啡豆處理製作，過去的10多年裏因其獨特的香氣和各路商家的炒作，價格一飛沖天。
然而，目前市面上大多數的麝香貓咖啡僅僅只是掛名的假貨，少數的正品也幾乎都來自島上咖啡農捕捉、圈養的麝香貓。這種集中飼養環境極爲惡劣，使用的麝香貓大多嚴重飲養不良，死亡率極高。即便是正品咖啡豆，這種由人工填喂，批量處理的豆子，從風格上來說已經不具備最早在自然條件賦予的特色，只能依靠後期除臭工藝中人爲添加香料代替。因此，不論從人道主義還是鑑賞價值，許多資深咖啡專家都倡議抵制這種殘忍的天價咖啡。
麝香貓
印度：印度的咖啡產地主要集中在南部高原，海拔較低、加上規律的季風氣候，讓這裏的羅布斯塔產量極高。當然，印度也種植更加優質的阿拉比卡品種，但是掣肘於海拔高度的限制，咖啡口味雖然醇厚綿密、微酸易飲，但是果香和複雜度十分少見。
巴布亞新幾內亞：雖然緊鄰印度尼西亞，但是這裏的咖啡與印尼咖啡風味差異很大。來自這裏的優質咖啡通常帶着綿密的口感，擁有極佳的甜度與複雜度。
也門：也門咖啡口味獨特，風格濃郁狂野。
雲南：雲貴高原同樣生產品質不錯的咖啡，雲南咖啡通常酸度較低，但是口感醇厚，風味均衡，常常有着堅果、焦糖、甚至巧克力的香氣。
由於篇幅限制，還有很多地方無法展開論述，但其實各個產地的咖啡雖有價格高低，但是並無貴賤。自己喜歡的，便是最好的。不用迷戀埃塞俄比亞的耶加雪菲，也不用過分癡迷翡翠莊園的昂貴瑰夏，多多嘗試不同產區的別樣風味，也許會有不一樣的發現哦。
